Chickpea Milk
A can of chickpeas makes the cheapest milk replacement that you’ve ever going to buy! It is so incredibly simple to make a plant-based milk substitute out of a can of chickpeas. Milk Prep
First things first we are going to drain and rinse our can of chickpeas. I rinse them really well! Then I add the chickpeas to a blender along with two pitted dates, and four cups of cold water. I blend it for about ninety seconds. For the next step I have a fine mesh bag and I add it to my container. I pour the blended mixture through the bag, into the container. Then I give the bag a light squeeze to strain out the milk.

Cookies
Then we need to put the milk in a saucepan and cook it for about twenty minutes. Just a gentle simmer. While that is simmering I use the leftover chickpea mash to make cookies. With the chickpea leftovers in a bowl I add a quarter cup brown sugar, two tablespoons natural peanut butter, a teaspoon vanilla, a quarter cup flour, half teaspoon baking powder, and a pinch of salt. Then mix! The texture seems to be good so then I add in some chocolate chips.

Baking and Cooking
Next I have a baking sheet with a piece of parchment paper. I spoon out eighth of a cup size cookies onto the sheet. Then I put them into the freezer so that they are firm for baking. Then I pour the milk back into a container and toss it into the fridge to cool down. And it is time to bake the cookies, I bake half of mine and let the others sit in the freezer for next time. My cookies go into the oven at 325ºF for about fifteen minutes.

Taste Test
The cookies didn’t flatten out so I flattened them myself with a spatula then added some flakey salt to them. I pour some chickpea milk for dipping! The cookies and the milk turned out great! So tasty! This recipe is amazing and easy too! You should give it a try! Watch the full video here!

Ingredients

- 1 can chickpeas
- 2 dates
- 4 cups cold water
cookies
- leftover chickpea mixture
- 1/4 cup brown sugar
- 2 tbsp natural peanut butter
- 1 tsp vanilla
- 1/4 cup flour
- 1/2 tsp baking powder
- pinch salt
- chocolate chips
Instructions

- Drain and rinse chickpeas. Add them to blender along with pitted dates, and cold water. Blend for 90 seconds.
- Add fine mesh bag to container for milk then pour the milk through. Squeeze the bag a little to strain out the milk.
- Add milk to saucepan and let it gently simmer for about 20 minutes.
- Pour into container then into fridge to cool down.

- Put leftover chickpea mixture into bowl with brown sugar, peanut butter, vanilla, flour, baking powder and a pinch salt. Mix! Add chocolate chips.
- Line baking sheet with parchment paper then spoon out cookies and place them. Put them into freezer for a little to firm before baking.
- Bake cookies at 325ºF for 15 minutes. Enjoy!
