1 Can Of Jackfruit will change the way you think about Chicken!
I LOVE making jackfruit chicken… it’s one of my favorite recipes and I keep fine tuning it and I will tell you this is the BEST ChickUn YET!! These chicken McNugget copies are by far the most realistic vegan chicken Ive made and probably you will ever try. They perfectly mimic a chicken nugget in every way from the taste, texture, bite chew and… well everything!

Jackfruit Chicken Nuggets

Ingredients
  

"Chicken"

  • 2 Cans Jackfruit Drained and washed
  • 2 pinches Kosher Salt
  • 1 Tbsp Nutritional yeast
  • 1/4 cup Gluten flour
  • 2 Tbsp Methylcellulose HV
  • 1 Tbsp Olive oil

Breading

  • 1 cup cornstarch
  • 1/2 cup flour
  • 1 pinch salt
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp mustard powder
  • 1 tsp white pepper
  • 1 tsp sugar
  • 1 cup Coconut Milk

Instructions
 

  • Add all the "chicken" ingredients into a food processor and pulse. Don't over blend as you still want chunks and strands of jackfruit
  • Once pulsed make your nuggets and toss into cornstarch.
  • Let the nuggets to rest for 30 minutes

Coating

  • Mix all the dry ingredients for the breading then mix in coconut milk 1/4 cup at time until you have a thick pancake batter.
  • Dunk the nuggets into the batter and remove to a lined baking sheet
  • Place in freezer for at least 2 hours.
  • Once frozen heat a high walled pan or dutch oven with your frying oil of choice to 350º f ( I use vegetable oil or canola oil
  • Fry until golden brown and place on a wire rack, sprinkle with salt and place in a warmed oven/microwave/toaster oven to keep warm. You want to eat this warm
  • If you make a big batch you can freeze them and reheat in toaster oven or air fryer and they come out great! These get better on their second cook actually!

    We made this recipe twice, cutting the ingredients and using one can of jackfruit. We really liked them especially the breading. We seasoned the jackfruit the second time and dipped the nuggets in an un-chicken broth before dipping them in the cornstarch because it seemed too bland and allowed the flavor of the jackfruit dominate without seasoning.

  2. What’s the purpose of the freezing step? Am I going to be sorry if I immediately batter and fry my nugs after their 30 minute rest?
