3 Ingredient MOCHI ANYONE Can Make at HOME

Red Bean Mochi

     I absolutely love mochi, it is one of my favorite treats. But I don’t commonly eat ice cream mochi, I eat a red bean paste mochi. It’s a little different, it’s dairy free, it’s vegan, it’s amazing. It only has a few ingredients, and only takes a few minutes to make. The mochi I’m making today uses sweet rice flour. Red Bean Paste

     To get started we need some red bean paste, some sugar, water, and a starch of your choice. First of all though we need to prepare our can of red bean paste. I give it a quick stir in the can. I take out tablespoon scoops and drop the scoop into a little cupcake tray liner. Once I fill the tray, I throw these into the freezer. In the meantime we can prepare the mochi dough. We need a microwave safe bowl and the sweet rice flour. 

Mochi Dough

     I add one cup sweet rice flour, and a quarter cup of sugar. Mix these together well. Then add one cup of water, mix this until it is a nice cohesive dough. But it is going to probably be a lot thinner than you’d expect. I scrape the sides down then cover it up then throw it in the microwave for three to three and a half minutes. Then I take it out at about every minute and use a rubber spatula to mix it up until it cooks into a solid kind of dough. I mix it up and scrape the sides then put it back in the microwave. 

Mochi Forming

     Now I get a baking sheet lined with some parchment paper. I evenly coat it with cornstarch because the mochi is sticky. Then I take my bowl out of the microwave and dump the mochi right onto the cornstarch covered sheet. I add a little more cornstarch to the top. Then use a rolling pin to roll the mochi out to the size of the pan. Then I add it to the freezer for just about ten or twenty minutes. When I take it out of the freezer I use a ring mold and cut out three and a half inch sections of the mochi.

Final Steps

     I use a little brush to get off any of the extra cornstarch on the inside. Take one of the red bean packets, drop it right in the middle. I pinch this all around kind of like a dumpling. I use some plastic wrap to squeeze the mochi in tight then I drop it right back into the cookie sheet. Once I finish them all I throw them back into the freezer for about thirty or forty minutes. Ingredients
  

  • 1 can red bean paste
  • 1 cup sweet rice flour
  • 1/4 cup sugar
  • 1 cup water
  • cornstarch

Instructions
 

  • Stir the red bean paste, then use a tablespoon to measure out scoops to put in the cupcake tray and liners. Once the tray is filled put it in the freezer.
  • In a microwave safe bowl add sweet rice flour and sugar. Mix them well. Then add water and mix. Scrape the sides down then cover it up and microwave it for 3-3.5 minutes (taking it out to stir each minute).
  • Line a baking sheet with parchment paper then coat the paper with cornstarch. Take the mochi out of the microwave and add it to the sheet. Add some cornstarch over top the mochi.
  • Roll it out with a rolling pin to the size of the sheet. Then put it in the freezer for 10-20 minutes.
  • Take it out freezer and use 3.5 inch ring mold to cut out the mochi. Use a little brush to remove extra cornstarch from the inside. Take a red bean packet and drop it into the middle of the mochi and pinch/wrap it around.
  • Use plastic wrap to squeeze the mochi tight. Then drop it right back into the tray. Once the tray is done put them back into the freezer for 30-40 minutes. Enjoy!
