I just saw a video over on @Goodful where @Merle O’Neal made an eggplant Wellington and WOW did it look good, so I had to make it!
After making the @Gordon Ramsay Eggplant steak ( https://youtu.be/E5YJA0xieI8 ) I wanted to see if there was a better way to make eggplant more meaty!
