Butter Bean Pasta
Today I’m going to be making a super quick, super easy, kind of Italian dish, out of butter beans! This is a wildly tasty lunch or dinner and it’s going to provide some awesome leftovers when we are all done! A half cup of butter beans, one serving, is gonna be six grams of protein, and about twenty one carbs. You can make this recipe your own with so many different variations. Prep
To start I mince up two cloves of garlic, pretty fine. I also mince up about a quarter of a red onion, pretty fine. I chop up a handful of basil too, leave the pieces a pinch bigger. Now I add olive oil to a pan on medium/high heat. I add in the onions and stir them around.
Cook
Once those go translucent, add in the garlic, some kosher salt, and black pepper, stir. Then I add in a can of cento tomatoes (I also add a little bit of water in the can to get the rest of the sauce out, add that to the pan). Now I add two cans of butter beans and some of their liquid into the sauce. These need about fifteen minutes to simmer together.
Final Touches
It actually simmered for a little longer than fifteen minutes and came out great. I stirred and broke up some of the beans to just release some of their starches into the sauce and kind of thicken it up. Now I’m going to toss in the basil, and about a quarter cup of soy milk to lighten it up a little. I turn the heat way down and add in some salt and chopped Italian olives. And it’s done! I add some to my plate and top it with a little more basil and a piece of bread on the side.
Taste Test
This is really good! The flavor of the sauce is great. The beans are kind of firm, so they have a nice snap when you bite them. The beans really are just like pasta. This is a delicious, comforting food! It has a decent amount of protein. The olives go great with the red sauce. And there are probably six servings in this recipe! Ingredients
- 2 cloves of garlic

- handful basil
- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tsp black pepper
- 1 can cento tomatoes
- 2 cans butter beans
- 1/4 cup soy milk
- 5 Italian olives
Instructions
- Mince garlic, red onion, and chop basil. Add olive oil to pan on medium/high heat. Add in onions and stir.
- Once onions go translucent, add in garlic, kosher salt, black pepper, stir. Add in cento tomatoes, butter beans and some of the liquid. Stir then let these simmer together for about 15 minutes.
- I broke up some of the beans to thicken it up. Now I add in the basil and soy milk. Stir it, turn down the heat then add in salt and Italian olives. Enjoy!
