Quick Healthy Lunch
Today’s recipe is one that fuels me through my six mile run! This lunch contains no meat, no dairy, there’s very little saturated fat. This whole recipe is going to be 550 calories. Air Frying
First things first I wash all my ingredients then chop and cube up my russet potato. I toss it onto a baking sheet along with a clove of garlic (or a couple cloves). Next I slice my mushrooms, add those to the sheet. Sprinkle everything with some salt, then I toss it all into the air fryer at 400ºf for thirty minutes or so.
Dressing
While those cook we are going to make our seasonings and sauce. We need to juice a whole lemon into a bowl, then to that add one tablespoon apple cider vinegar, a tablespoon of olive oil, a pinch of salt, a quarter teaspoon of turmeric, a quarter teaspoon of ginger, a quarter teaspoon of cayenne pepper, a quarter teaspoon white pepper and a teaspoon of cumin. Give that a good whisk and then just set it aside.
Steaming
I have 180 grams of broccoli here, I’m going to remove the stems, then break it into smaller pieces. Now I toss it into a steamer basket. For the cauliflower, we need about 180 to 200 grams. Salt, then steam the cauliflower and broccoli for five minutes or so. This all took less than a half hour! Now I’m going to dump the potatoes and the garlic into the sauce and toss it around.
Taste Test
After they are covered in the sauce, I plate the potatoes. Next I add the cauliflower, broccoli, mushrooms and drizzle on the sauce. Lastly I add in one tablespoon of hemp seeds, some kale, basil, and arugula sprouts. This is an awesome quick healthy lunch. And it tastes so good! It’s a little spicy, and has a very strong flavor. Ingredients
- 1 russet potato
- 1-2 cloves of garlic
- a couple mushrooms
- salt
- 1 lemon
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1/4 tsp turmeric
- 1/4 tsp ginger
- 1/4 tsp cayenne pepper
- 1/4 tsp white pepper
- 1 tsp cumin
- 180 grams broccoli
- 180 grams cauliflower
- 1 tbsp hemp seeds
Instructions
- Wash all ingredients. Cube up potato, then toss it onto baking sheet along with garlic. Slice up the mushrooms and add those to the sheet. Sprinkle with salt and toss it into the air fryer at 400ºf for 30 minutes.
- Juice a lemon into a bowl, then add apple cider vinegar, olive oil, salt, turmeric, ginger, cayenne pepper, white pepper and cumin. Whisk and set it aside.
- Remove the stems from the broccoli and break it into smaller pieces. Toss it in the steamer basket along with the cauliflower. Salt, then steam them for 5 minutes.
- Dump the potatoes into the sauce and toss them around. Then plate them along with everything else. Drizzle on the sauce, then I also add on hemp seeds. Enjoy!
