Chickpea Subway Cookies
I’ve made a lot out of chickpeas. Today we are making one can of chickpeas into Subway cookies. But specifically, subway macadamia nut cookies because I used to love them growing up and haven’t had them in a long time. If you like this recipe be sure to check out this one too! and this one!

Chickpea Prep
First things first we need to drain the can of chickpeas, saving the aquafaba (the liquid inside the can). If there are loose skins floating around I remove them. This recipe requires a nut butter. You could use peanut butter, cashew butter, almond butter, whatever you want to use. And we are also going to be using almond flour. I add one cup of almond flour into a high power food processor. I pulse until it starts to butter together, but I also add a quarter cup of creamy peanut butter.

Processing
Once that is nice and smooth I take it out of the food processor and add the chickpeas into the food processor. I process them down for two or three minutes. Then I add in three tablespoons of aquafaba and keep processing. Next I add in about half of the nut butter and process again for another minute or two. Then I add the rest of the nut butter and the rest of our ingredients. Along with that we are going to add two tablespoons of the almond flour and three tablespoons of sugar.

Cookie Prep
I mix that on low until it all comes together. Then I add about half a cup of white chocolate chips, and pulse those in quickly. Then I add in a quarter cup of macadamia nuts, chopped. Once everything is all combined I add the cookie dough into a bowl and then into the fridge to firm up. While it is firming I preheat my oven 350ºf. When it is preheated I pull that out of the fridge. And start scooping out a little bit bigger than a golf ball sized cookies. I do that onto a parchment paper lined baking sheet.

Baking And Tasting
I bake them for about seven minutes, take them out and they are still ball shaped so I flatten them out. I sprinkle the top with a bit more macadamia nuts. Toss them back into the oven and bake for about another eight minutes or so. I let them cool and they look amazing! They taste amazing too! These chickpea cookies are gluten free! One Can Of Chickpeas Will Change How You Think About Subway Cookies
Ingredients
- 1 can chickpeas
- 1 cup almond flour
- 1/4 cup creamy peanut butter
- 3 tbsp sugar
- .5 cup white chocolate chips
- 1/4 cup macadamia nuts
Instructions
- Drain can of chickpeas, saving the aquafaba. Remove any loose skins.
- Add almond flour to food processor, pulse. Add peanut butter, pulse.
- Once that is smooth, remove it from the food processor and set it aside. Add the chickpeas to the food processor and pulse for 2-3 minutes.
- Add in aquafaba and pulse again. Add half of the nut butter and process for a minute or 2. Add the rest of the nut butter and more almond flour, and sugar.
- Mix that on low until it's all combined. Add white chocolate chips and chopped macadamia nuts and pulse.
- Take the dough out and put it in a bowl and cover it to let it firm in the fridge.
- Preheat oven to 350ºf. Once preheated I add the cookies onto a lined baking sheet, bake for 7 minutes, take them out and flatten them, then bake for about 8 more minutes. Enjoy!
