One can of Chickpeas will change how you think about BLT

CLT Sandwich

     Today I’m making a BLT! Except it’s actually a CLT, chickpea lettuce tomato! This is my new favorite sandwich! It is delicious, easy, quick, so let’s dive in! If you like this recipe, check out this one too! and this one!

     To begin, I drain my can of chickpeas, saving the liquid! That liquid is called aquafaba. Now I set my chickpeas aside, and grab a little food processor. In it I add about a quarter cup of the aquafaba, two cloves of garlic, a little salt, black pepper, about a tablespoon of vinegar and half of a block of firm tofu. Then we want to process this down until it is like a smooth hummus spread. Almost like a mayonnaise consistency. Next I add my drained chickpeas to a bowl with some salt, pepper, and some garlic powder. Give that a good toss around.

Cook The Chickpeas

     Now I am going to get a pan nice and hot with a little oil. While that heats up I slice up a quarter of a red onion. Then I squeeze my chickpeas with a fork, I don’t want to completely mash them. Just break them into smaller bits. That pan should be hot about now, so we are going to add the onions in, let them cook for just a moment. Next add in the chickpeas. I’m not going to really move the chickpeas. I’m going to let them kind of sear and brown on one side for about two or three minutes before I flip to the other side. Then I add a little smoked paprika, maple syrup and mix that up.

Final Touches

     Time to move the chickpeas to a bowl and get our bread toasted. For the bread I am using Dave’s Killer Bread, thin slice, sprouted whole grain. For the tomato, you can use whatever tomato you like but personally I think beef steak is the only option. I slice up some pretty thick tomato slices. I chop my iceberg lettuce as well. To assemble, I top each bread slice with a bit of our spread, then chickpeas, shredded lettuce, and tomatoes!

Taste Test

     This is really good and so refreshing. This sandwich is so flavorful and it even has a little kick from the garlic mayonnaise. What a fantastic lunch! And it was pretty quick and easy to make. Ingredients
  

  • 1 can chickpeas
  • 2 cloves garlic
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp vinegar
  • .5 block firm tofu
  • 1 tsp garlic powder
  • 1 tbsp oil
  • 1/4 red onion
  • 1 tsp smoked paprika
  • 1 tbsp maple syrup
  • bread
  • 1 tomato
  • iceberg lettuce

Instructions
 

  • Drain chickpeas but save liquid. Set chickpeas aside.
  • In food processor add chickpea liquid, garlic, salt, black pepper, vinegar and tofu. Process it until smooth.
  • Add chickpeas to a bowl with salt, pepper, and garlic powder then toss them around in it.
  • Put some oil in a pan and get it hot. Slice up red onion, then squeeze the chickpeas with a fork into smaller bits. Add the onions to the pan, let cook for a moment, then add chickpeas. Let them cook on one side for 2-3 minutes then flip sides.
  • Add smoked paprika and maple syrup then mix.
  • Move the chickpeas to a bowl, toast your bread, slice the tomato and lettuce. Add spread to bread slices then chickpeas, lettuce and tomatoes! Enjoy!
