Chickpea Pancakes
I have made so much stuff out of chickpeas! I love canned chickpeas, they are super easy, and there’s so many recipes you can make with them. Today we are making pancakes. They are going to be loaded with protein, about eight to ten grams of protein per pancake. If you like this recipe, be sure to check out this one too! and this one!

Prep
To start we need to drain the can of chickpeas, saving the liquid in the can (aquafaba). Add the chickpeas into a blender along with a quarter cup of cashew butter (if you have cashews you could add maybe half a cup of them into some boiling water, cook them down for fifteen or twenty minutes, then blend them into a cashew cream). Then I also add in a quarter cup of the aquafaba, a quarter cup of hemp seeds, and a tablespoon of chia seeds. At this point I blend these ingredients together.

Blending
Once that has been blended I add in a half cup of applesauce, then a teaspoon of baking powder, a teaspoon of vanilla extract, three tablespoons of protein powder, (if you have vanilla protein I suggest using that, but I only had chocolate), then blend everything on low. When it has a good pancake consistency, I stop blending and let the chia seeds sit and thicken up. Time to heat up the pan, I’m using a big nonstick crepe like pan (you can use any non stick pan), I add a touch of coconut oil to it.

Taste Test!
Now that the mixture has sat for a bit I’m going to pour about a quarter cup onto the pan. Keep it on a low heat. You can cook two or three at a time depending on the size of your pan. They turn out amazing looking. They are nice and airy inside. I top mine with a little bit of butter and maple syrup. In three pancakes we have about twenty four grams or protein, thirty grams of carbs. This was a super quick recipe! The pancakes are so tasty, they have a nice soft bite. One Can Of Chickpeas Will Change How You Think About Pancakes
Ingredients
- 1 can chickpeas
- 1/4 cup cashew butter
- 1/4 cup hemp seeds
- 1 tbsp chia seeds
- 1/2 cup applesauce
- 1 tsp baking powder
- 1 tsp vanilla extract
- 3 tbsp protein powder
- pinch coconut oil
Instructions
- Drain the chickpeas, save the aquafaba. Add the chickpeas to a blender along with cashew butter, aquafaba, hemp seeds, chia seeds and blend.
- After thats blended, add in applesauce, baking powder, vanilla extract, and protein powder then blend until it has a pancake mix consistency.
- Let the chia seeds sit and thicken while the pan heats up, add coconut oil to pan.
- Add pancake mix to pan and cook for a few minutes. Enjoy!


I love your recipes, but you made a mistake in the written instructions calling for 1 cup of apple sauce. In your video you say 1/2 cup. I tried to make them and they wouldn’t bind with the full cup of apple sauce.
I added about 3/4 cup of oats to the mix after making the first two… worked much better after that!
Also a very delicious tasting pancake… even the ones that didn’t bind!

Hey Mr. Stashe I love your videos and content, and have for years now. We’re about the same age, I turn 44 in August. I’m now working on getting healthier, working out in the gym and have even started a couch to 5k program. Thanks for being open and vulnerable about your health journey, it has been motivating. I made your chickpea sandwich bread recipe and the whole family felt it was a hit. Your chickpea cookies also were great. I have a box of the black bean brownie protein bars, I love em, way better than store bought. I think the pancakes fell a little flat. I got frustrated with the batter because it wouldn’t cook all the way through and felt like I was eating hot lightly sweetened hummus, not for me. I would love to try the chickpea snickers bar, but my son has a tree nut allergy and we don’t use almond flour. Is there a flour you would substitute? I think chickpea flour would probably ruin it. Would coconut flour work? I appreciate what you do, keep up the good work.
