Crispy Roasted Chickpeas

     I love crispy roasted chickpeas! It is one of my favorite snacks and it blows my mind when I see them in bags at the grocery store for a couple of ounces for $5-10. They are super incredibly easy to make and you get so much more with just a can for like a dollar. I have shown you how to make these before on instagram reels and youtube shorts but I wanted to break down a few different methods on how to do it. Both versions I am making today are going to be cheeto flavored, flamin hot cheetos and regular cheetos. If you like this recipe be sure to check out this one too! and this one!

Flamin Hot Flavor

     Starting with the flamin hot flavor, I’m going to drain and rinse our chickpeas, and save the aquafaba liquid! I set the liquid aside for now. Then I grab a clean kitchen towel and lay it out on my counter then pour the chickpeas onto it. I roll the chickpeas around with my hands and with the towel to try and remove some of the skins. I’m also making sure they are very dry. Then for my seasonings, in a food processor I add a quarter cup of nutritional yeast, half teaspoon salt, half teaspoon cayenne pepper, half teaspoon red crushed pepper, half teaspoon garlic powder, quarter teaspoon onion powder, eighth teaspoon of chili powder, half teaspoon paprika, and some annatto for color! I mix everything then add a touch of lactic acid, and a half teaspoon of cornstarch, give it another mix. 

Cook

     Then I put some olive oil on the chickpeas, and toss them around in the flamin hot mixture! Now I toss them onto my air fryer rack, and into the air fryer at 400ºf for about fifteen minutes. While those cook I grab a spray bottle and add some of the aquafaba in. And as soon as the chickpeas are done I spray them with the aquafaba. Then I give them another coat of flamin hot seasoning. Then toss them back into the air fryer for just one minute. And they are done! As a snack these are fantastic. They have great flavor, you can hear the crunch! The one thing about these versions is they do get roasted, they have a roasted flavor.

Cheesy Flavor

     For this next version we start again by draining the chickpeas, save the liquid. Drop the chickpeas into a towel and knock off as many skins as possible. Then toss them into a bowl in the sink with cold water and the skins will float to the top. Then drain and dry the chickpeas. Grab a piece of parchment paper and a pan and put the chickpeas in the oven at about 225 maybe 250ºf and let them go for about an hour. Now for the seasoning in the food processor I add a quarter cup nutritional yeast, half teaspoon lactic acid, teaspoon salt, a little garlic powder, and some paprika. Quickly blend it up. Then I add a bit of cornstarch. At this point the chickpeas are nice and dehydrated. 

Tasty!

     They are not cooked though so I’m going to raise the temperature to 350ºf. Spray the chickpeas with the aquafaba then dump in the seasoning, make sure they are fully coated! Then I toss them back onto the baking sheet and into the oven for about ten minutes. Then when they are done, put them right back into the seasoning while they are hot. These taste great! The spicy batch tastes like flamin hot cheetos! They are super crisp and have a great crunch. The regular ones taste great as well! They are cheesy, and delicious! Watch the full video here!

Ingredients
  

Flamin hot

  • 1 can chickpeas
  • 1/4 cup nutritional yeast
  • .5 tsp salt
  • .5 tsp cayenne pepper
  • .5 tsp red crushed pepper
  • .5 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp chili powder
  • .5 tsp paprika
  • annatto
  • touch lactic acid
  • .5 tsp cornstarch
  • pinch olive oil

Cheesy

  • 1 can chickpeas
  • 1/4 cup nutritional yeast
  • .5 tsp lactic acid
  • 1 tsp salt
  • pinch garlic powder
  • pinch paprika
  • pinch cornstarch

Instructions
 

Flamin hot

  • Drain and rinse chickpeas, save the aquafaba. Lay out towel on the counter and roll out the chickpeas to remove the skins and dry them.
  • In food processor add nutritional yeast, salt, cayenne pepper, crushed red pepper, garlic powder, onion powder, chili powder, paprika, and annatto. Mix then add lactic acid and cornstarch, mix again!
  • Put some olive oil on chickpeas then toss them around in the seasoning. Put them on air fryer rack and into the air fryer at 400ºf for 15 minutes.
  • Add aquafaba to spray bottle. As soon as chickpeas are done, spray with aquafaba then coat again in the seasoning. Then back into the air fryer for 1 minute.

Cheesy

  • Drain the chickpeas, save the aquafaba. Knock off the skins with a towel. Put a piece of parchment paper over your pan and add the chickpeas. Cook at 225-250ºf for about an hour.
  • Into the food processor I add nutritional yeast, lactic acid, salt, garlic powder, and paprika. Mix it up then add cornstarch.
  • Now the chickpeas are dehydrated but not cooked so turn the temp up to 350ºf. Spray the chickpeas with aquafaba then toss them in the seasoning, make sure they are fully coated.
  • Then toss them onto a baking sheet and into the oven for about 10 minutes. When they are done add them right back into the seasoning while they are hot.
