Potato Steak
Would you believe me if I said you could make meat from a sweet potato? I watched a video over on Tiktok from @ Veganphoodie, he came up with the idea after dehydrating some sweet potato and realizing it looked kind of like a jerky and wanted to rehydrate it. Potato Prep
I took my sweet potato and peeled it. Then sliced it up, threw it into some salted water and boiled it. Once the potato was cooked all the way through I then pulled the potato apart. The sweet potato has these layers that resemble layers of meat. I know a regular potato doesn’t have that same fibrous structure but I still thought, what if I peel it, boil it, then see how it comes out once it is dehydrated. I was going to be done there but then I remembered that the yucca root has a nice fiber-y structure, so I thought, why don’t I filet the skin off of this one, chop it up, throw it into some water, boil it down and then see how it comes out.
Marinade
The yucca root became soft on the inside but it does have some vertical structures throughout. For all three of these I put them on some dehydrator trays, then on the dehydrator at 140ºf for about twenty four hours. While we wait, let’s make a marinade. This marinade is going to consist of about a quarter of a red onion chopped, three cloves of garlic chopped, a green onion minced at the end but sliced on the green part. Toss that all together with some black pepper, about a cup of soy sauce, half a cup of rice vinegar, a quarter cup of maple syrup, and a teaspoon of sesame oil. Mix that all together then toss it in the fridge.
Cooking Steak
After about nineteen hours everything looked pretty good, so I took them off the dehydrator. I grabbed three containers and added my dehydrated taters then also tossed in a few spoonfuls of the marinade to each one. Then I put the lids on and gave them all a gentle shake. Next I put them in the fridge for about an hour. I wanted to cook these the same way. I tossed a little oil then the potatoes. For the yucca root I added in some oil, and tossed them around until they crisped and browned a bit. But then I added in some water, covered them up and let them steam to finish off. With the sweet potato I again added in some oil and tossed them around.
Taste Test
First off I tried the regular potato, it’s dense and the flavor is great. The yucca next, this definitely still tasted like potato. It still tastes good, but not like meat. The sweet potato tasted great too. A little potato like but still meaty. The sweet potato steak wins! It is much easier to eat, and it has the better texture for sure. Watch the full video here!
Do Potatoes Make The Best Steak?
Ingredients
- 1 sweet potato
- salt
- red onion
- garlic
- green onion
- pinch black pepper
- 1 cup soy sauce
- .5 cup rice vinegar
- 1/4 cup maple syrup
- 1 tsp sesame oil
- oil
Instructions
- Peel sweet potato, slice it up and throw it into salted water and boil it.
- Once cooked all the way through, pull the potato apart.
- Add potato onto dehydrator tray then into the dehydrator at 140ºf for 19 hours.
- Mix together red onion, garlic, green onion, black pepper, soy sauce, rice vinegar, maple syrup, and sesame oil. Put that in the fridge.
- Put potato into container and add in marinade. Put on the lid and gently shake it. Put it in the fridge for 1 hour.
- Put a little oil in a pan, then add in the potato and toss it around. Enjoy!
