I have started playing around more with texture and I realized quickly that when you dehydrate fruit or veg that the texture when rehydrating changes. usually denser, more of a bite. Fibers are more apparent in mushrooms. So I wondered… what would happen if we dehydrated then rehydrate jackfruit… I am so glad I did. This is BY FAR the BEST jackfruit vegan meat I’ve made!!
