Mushroom Ribs

     To get started making mushroom ribs I have four fairly large king oyster mushrooms, I have a bottle of coca cola. One of the first things we want to do is prep the mushrooms. I chop off the mushroom cap and the very end of the stem. Then I also slice them in half, and put them in a bowl. Now we need to season them, I use garlic salt, some mushroom seasoning, kosher salt, cumin then rub that into the mushrooms. Roll them over and repeat the seasonings on the other side! Soaking

      At this point I want to mix together the brine which is going to be a twenty ounce bottle of coke, about a cup of sparkling water or club soda, a tablespoon of soy sauce, about a teaspoon of liquid smoke. Then pour the brine over the mushrooms! The mushrooms float so I use some plates to weigh them down and make sure they stay submerged. Allow them for about an hour to soak. The next step is going to be to sear these!

Cooking

     I heat up a large skillet with some grape seed oil on a medium to high heat. I quickly sear them on all sides! Make sure they have a good crust on them all the way around. Also don’t dump out that coke mixture yet! Once they are done searing I take them out and give them a quick score, this helps with the texture! In a bowl I add a quarter cup of bbq sauce, then a half cup of our coke seasoning liquid and give it a mix.

Tasting

     Then pour this onto the mushrooms, I use a brush to make sure it gets into the crevices. Save a little sauce. The oven is preheated at 350ºf. We’re going to cook the mushrooms for twenty to twenty five minutes. Next baste them about half way through while they are cooking! Just give them a little brush of the sauce. Ingredients
  

  • 4 king oyster mushrooms
  • garlic salt
  • mushroom seasoning
  • kosher salt
  • cumin
  • 20 ounce bottle coca cola
  • 1 cup club soda or sparkling water
  • 1 tbsp soy sauce
  • 1 tsp liquid smoke
  • oil
  • 1/4 cup bbq sauce

Instructions
 

  • Remove mushroom caps and end of stems. Slice them in half. Season on both sides with garlic salt, mushroom seasoning, kosher salt, cumin.
  • Combine coke, sparkling water or club soda, soy sauce and liquid smoke. Pour over the mushrooms. Use something to weigh them down and keep them submerged for 1 hour.
  • Heat large skillet with oil to medium/high heat. Quickly sear mushrooms on each side until they have crust all around. When done, remove them and score them.
  • In bowl add bbq sauce and some of the brine, mix. Pour this onto the mushrooms, use brush to get it in crevices.
  • Into the oven at 350ºf for 20-25 minutes. Baste them halfway through with the sauce. Enjoy!
