Does TOFU Make the best Chicken Sandwich?

Tofu Chicken Sandwich

     Tofu makes a better vegan chicken sandwich than just about any other plant based meat out there. Let me show you how. We are going to start with an extra firm block of tofu. I’m going to tear my block in half. I’m tearing because I don’t want flat edges, I want kind of a rough edge. Next I am going to season and salt the tofu. I start off by adding on some white vinegar, then garlic powder, onion powder, and kosher salt, making sure it’s entirely coated. Tofu Prep

     I have a small broiler rack from my toaster oven but if you have any sort of racked baking sheet that is going to work best for this because we are going to throw it into the oven on a convection setting at 200ºf for about two hours. If you don’t have convection, just leave the door propped open. After two hours the tofu is nice and dry. Now I’m going to use something heavy to press on it and smooth down the rough texture. So I let that sit for about thirty minutes.

Coating

     While that sits I’m going to make a marinade. In a large bowl I add two cups of plant based milk, about two tablespoons of dill pickle juice, and a teaspoon of arrowroot starch. Give that a good whisk. Before I add the tofu in, I break off its corners. Toss the tofu into the marinade, throw a cover on, and let it sit. In a large bowl I add a cup of flour, pinch of sugar, smoked paprika, crushed black pepper, and salt. Now I just go from the plant based marinade into the flour. Toss the tofu around a little then pull the first one out, set it on a rack and repeat the process for the second tofu. 

Taste Test

     I add some peanut oil to a large dutch oven, bring that up to about 365ºf. Add the tofu in, fry them on both sides. After about seven minutes or so they should be ready to go. Pull those out and we can assemble our sandwich! I add my fried tofu chicken onto a toasted bun, add on some sauce, pickles, and bun! Boom! This looks awesome. And tastes awesome too! It feels like chicken when you bite into it! And the skin really feels like fried chicken skin. Ingredients
  

  • 1 extra firm block of tofu
  • white vinegar
  • garlic powder
  • onion powder
  • kosher salt
  • 2 cups plant-based milk
  • 2 tbsp dill pickle juice
  • 1 tsp arrowroot starch
  • 1 cup flour
  • pinch sugar
  • smoked paprika
  • crushed black pepper
  • salt

Instructions
 

  • Tear tofu block in half, season with white vinegar, garlic powder, onion powder and kosher salt.
  • Put on broiler rack and into oven on convection setting at 200ºf for 2 hours.
  • When it's done use something heavy to press down the tofu for 30 minutes.
  • In large bowl add plant based milk, dill pickle juice and arrowroot starch, give that a good whisk.
  • Break off corners of tofu and add it to the marinade. In another bowl add flour, sugar, smoked paprika, black pepper, and salt.
  • Transfer the tofu from the marinade to the dry ingredients. Pull it out and set it on a rack. repeat the process for the second tofu half.
  • Add peanut oil to large dutch oven, bring it to 365ºf. Add the tofu in, fry on both sides! After about 7 minutes they are done. Assemble your sandwich and enjoy!
