No Boil Pasta
Pasta is a simple dish! But what if it could be easier? You don’t want to boil your pasta! I think less time is always better, especially if it works out to be the same. Soaking
I’m going to grab a baking dish, and toss my pasta in. Fill the baking dish with tap water and throw some salt on top. I set a timer and let this sit for two hours. We need to make some sauce as well. About an hour and a half into my pasta sitting, I start the sauce. I threw a pan on the stove and left it cold. Add in a tablespoon or two of olive oil, mince up and toss in about four or five to ten cloves of garlic, however much you like. I also mince up about half of a small onion and toss that into the pan. Now I turn it on a medium/low heat, for the next five minutes and let it sit.
Sauce
After five minutes I add some salt, pepper, basil, and a few squeezes of tomato paste. Let the tomato paste cook for about five minutes. Then I add in a can of whole peeled tomatoes, and then about a quarter can of water. Now stir, and keep it on a low/medium heat simmering for about twenty five minutes. Stir every now and then! When the sauce is boiled down, give it a taste. It could be ready to go or you can add some seasoning, most people use salt but you could use nutritional yeast, mushroom powder, msg. I added mushroom seasoning to mine.
Finishing Pasta
The pasta has been sitting for about two hours and it feels like fresh pasta would! I want to do a taste test comparing between boiled spaghetti and soaked spaghetti and see what the difference is. I know there will be a difference in the sauce. The soaked noodle weighs less because it’s not entirely hydrated yet, it still needs to be cooked. And that is going to happen, in our scenario, in the sauce. Before I put the noodles in the sauce, right before the two hour timer, I rinsed the noodles off with a gentle cold spray and agitated it really gently. Then they go right into the sauce! Stir them around!
Taste and Compare
The boiled pasta is fine but the sauce doesn’t stick to it well. With the soaked pasta, the sauce sticks way better, and the sauce seems to be thicker as well. Ingredients
- 1 container spaghetti noodles
- salt
- 2 tbsp olive oil
- 5-10 cloves of garlic
- .5 small onion
- pepper
- basil
- tomato paste
- 1 can whole peeled tomatoes
- mushroom seasoning
Instructions
- Add pasta to baking dish and fill it with water, sprinkle in salt. Let sit for 2 hours.
- Add pan to stove and add in olive oil, minced garlic and onion. Turn it on a low/medium heat and let sit for 5 minutes.
- Then add salt, pepper, basil, and tomato paste. Let that cook for about 5 minutes.
- Add in can of tomatoes, then a quarter can of water, stir and keep it on low/medium heat for 25 minutes.
- Give it a taste, season if needed, I added mushroom seasoning.
- Rinse off pasta with cold spray of water and agitate them a little. Then add them to the sauce and stir and cook for a moment. Enjoy!
