Healthy Soup
Can eating soup every day make you live longer? There’s a specific soup that has been talked about for at least a decade with that context in mind. It is the Sardinian minestrone soup! Prep
I start by adding a half cup of dry lima beans to a bowl, along with a half cup of pinto beans, and a half cup of dry chickpeas. Cover them with filtered water and let them rest overnight. The next morning I drain the beans in a colander and rinse them really well. I pick out any skins that float to the top. In the meantime I’m going to chop up a whole yellow onion, three carrots and three stalks of celery. This recipe is super versatile, you can use a lot of different vegetables and beans depending on what you prefer.
In the Dutch Oven
Then in a large dutch oven, oven over a medium heat, add in olive oil and the chopped veggies. I stir often until it is all soft, you don’t want it to brown. Next I crush and mince up three cloves of garlic and then toss that in. After that I add in a 35 ounce can of san marzano tomatoes. While that is cooking I’m going to peel and dice up three large potatoes and a whole thing of fennel. I add in the potatoes and the fennel (about 1.5 cups worth of fennel). Now for our herbs, I’m going to chop some Italian parsley and basil.
Simmer and Boil
Then add the herbs in along with the beans, about six to eight cups of water, and bring it to a boil. Once it gets to a boil, turn it down to a low simmer. Let that simmer, uncovered. Add water as necessary, it doesn’t need to be thick. My soup has been on a low simmer for three hours now, it’s time to add a cup of couscous. Add enough water to make it soup-like. Also add a big pinch of salt, and fresh cracked black pepper. Let the couscous cook for about ten minutes or so.
Taste Time
At this point it is ready to be served! I add a few scoops to a bowl, top with a little drizzle of olive oil. It looks perfect! And it’s super healthy! Ingredients
- .5 cup dry lima beans

- 1 yellow onion
- 3 carrots
- 3 stalks of celery
- olive oil
- 3 cloves garlic
- 1 35 ounce can san marzano tomatoes
- 3 potatoes
- fennel
- Italian parsley
- basil
- 1 cup couscous
- salt
- black pepper
Instructions
- Add lima beans, pinto beans and chickpeas to a bowl, cover them with filtered water and let them rest overnight.
- Drain and rinse the beans in a colander, pick out any skins that float up.
- Chop onion, carrots and celery.
- Put dutch oven over medium heat, add in olive oil and veggies. Stir and let veggies get soft.
- Crush and mince garlic and add it in as well as can of san marzano tomatoes.
- Peel and dice potatoes and fennel and add them in.
- Add in chopped Italian parsley and basil, the beans and water. Bring it to a boil, but once it gets to a boil, bring it down to a simmer.
- Mine simmered for 3 hours, uncovered. Add couscous, salt, black pepper and let it cook for 10 more minutes. Enjoy!

I went to your website for the recipe but it only leads me back to the video….Do you have any place for printable recipes on YouTube OR on your website? I sure can’t find anything but videos……Thanks so much… Love your videos but a re pie is wayyyy easier to work from…
Very frustrating video. There are so many commercial sites with links to “FULL RECIPE” that I could never reach it. All links wanted to add extensions to browser. Even when I allowed, I never found the entire Sadinian Minestrone soup recipe in print. I say “NO THANKS” to every .com including Warby Parker.
