General Tso’s Chickpeas
Today I am going to teach you how to make my General Tso’s Chickpeas dish! This meal has changed the way I feel about Chinese takeout food. This chickpea hack has made quick lunches a game changer, as you get the taste of some of the best Chinese takeout dishes but super quick, super easy, 100% plant based, loaded with protein, a little bit more healthy, and just awesome! Chickpeas
First we need one can of chickpeas, drained. Now add the chickpeas to a bowl along with a teaspoon of soy sauce and a sprinkle of your favorite bbq sauce or steak sauce, I’m using Not Steak Sauce which is my sauce! I also add a teaspoon of minced garlic, a little black pepper, and a tablespoon of cornstarch. Then I give it a good mix and set it aside while we get everything ready to make our sauce, which should only take about ten minutes.
Sauce
For our sauce we need a small saucepan. Add in around a quarter cup of soy sauce, a tablespoon of rice vinegar, a tablespoon of Not Steak Sauce, a half cup of vegetable broth, a half cup of brown sugar, one teaspoon minced garlic, red pepper flakes, and about a teaspoon of fresh ginger grated. I’ve been doing this trick where I freeze my ginger, I wash it, keep the skin, toss it in the freezer. Time to turn up the heat, whisk everything, and let it come to a simmer.
Cooking Time
In the meantime I’m going to grab a non-stick skillet, add a little oil, turn the heat on, then add the chickpeas and let them fry. I want them to get nice and toasty. While these are cooking I’m going to prepare a head of broccoli and one red chili pepper. About now the chickpeas are almost done, so I add in the chili pepper then toss it around for a moment. Once they’ve cooked together for a minute, I toss it in a bowl. We’re going to steam the broccoli in the same pan. Add a little salt, a little water, then cover it up with a lid for a few minutes to steam until it’s soft but crunchy.
Taste Test!
Then I prepare a tablespoon of water with cornstarch for a slurry, toss that into the sauce and whisk to thicken. I add a little bit at a time to control the thickness. And we are done! This took maybe ten minutes at most. I’m just going to pour the sauce over the chickpeas, and toss it around. Now grab a bowl with some rice, add the chickpeas, broccoli, and cover with a bit more sauce. Maybe add some sesame seeds and green onion. This looks incredible. This is really good! It’s crispy, the sauce coats it so nicely, and there’s tons of flavor. It’s sweet and spicy! This is a great dinner or lunch! Watch the full video here!
One Can Of Chickpeas Will Change How You Think About General Tso’s
Ingredients
- 1 can chickpeas
- 1/4 cup soy sauce
- 2 tsp minced garlic
- pinch black pepper
- 1 tbsp cornstarch
- 1 tbsp rice vinegar
- 1 tbsp Not Steak Sauce
- .5 cup vegetable broth
- .5 cup brown sugar
- pinch red pepper flakes
- 1 tsp ginger
- pinch oil
- 1 head of broccoli
- 1 red chili pepper
- pinch salt
- rice
Instructions
- Drain the can of chickpeas then add them to a bowl with soy sauce, Not Steak Sauce, minced garlic, black pepper, and cornstarch. Give it a good mix then set it aside.
- In a small saucepan add soy sauce, rice vinegar, Not Steak Sauce, vegetable broth, brown sugar, minced garlic, red pepper flakes, and ginger.
- Add oil to a non-stick skillet, turn the heat on then add the chickpeas and let them fry.
- Prepare broccoli and red chili pepper. Add chili pepper to the chickpeas and let them cook together for a moment. Then add them to a bowl.
- Now we are going to steam the broccoli in the same pan. Add a salt and water then a lid for a few minutes.
- Mix together water and cornstarch then slowly add it to the sauce. Pour the sauce over the chickpeas and toss it around. Add the chickpeas over some rice, with the broccoli, some more sauce, and maybe sesame seeds and green onion. Enjoy!
