Healthier Potato Dishes
Potatoes are actually incredibly healthy. It just happens that most people prepare potatoes in a way that ruins their chance of being healthy. Growing up we had baked potatoes and mashed potatoes a lot. Lots of butter, sour cream, cheese, or bacon was always added to make the potato fatty and delicious, but horrible for you. Potato Snack
Sometimes I’ll just have potatoes as a snack. For example I’ll just cube one up, add it to a bowl with a pinch of olive oil, then some salt, garlic powder, parsley, and pepper. Toss them around in the bowl, to spread out the seasonings then add them to the air fryer. Twenty minutes later they come out awesome! These could be breakfast potatoes, a side dish, or just a snack! They are super good! Crunchy, crispy! And you don’t need to add anything else to them. If you are trying to lose weight, this will keep you fuller, longer!
Mashed Potatoes
Now for our mashed potatoes. I’m starting with three yukon gold potatoes. I quickly peel and cube them. Instead of boiling, which I know is pretty common for mashed potatoes, I’m going to steam them. But before we toss them into the steamer, add a cup of cauliflower. The cauliflower is going to reduce the overall calories, and also make the potatoes creamy. Toss the cauliflower and the potatoes in with a big pinch of salt, cover it, and let these steam for about twenty minutes.
After they are done steaming I’m just going to toss them into a bowl. Then I add a cup of vegetable broth to a mug with a little olive oil, into the microwave to warm up. While that warms up I take my hand mixer and start whipping the potatoes together. I add a little bit of hot veggie broth and mix some more. Once you have got the consistency to your liking, add your seasonings. I add salt, onion powder, white pepper, and a pinch nutritional yeast. - white pepper
- nutritional yeast
Instructions

- Peel and cube potatoes. Add cauliflower to steamer, then potatoes and a big pinch of salt.
- Let them steam for 20 minutes. After they've steamed put them in a bowl. Add vegetable broth to mug with olive oil and heat it up.
- Start whipping potatoes together with hand mixer, add veggie broth and mix some more. Once the consistency is right, add your seasonings. Onion powder, salt, white pepper and nutritional yeast. Enjoy!
