High Protein Pancakes (My Secret Ingredient Changes Everything)

Protein Pancakes

     The stack of pancakes I’m going to make today will come out to 70 grams of protein. And I have a secret ingredient that makes these tasty, incredible, and plant based! Now I’m not going to eat all 70 grams, it’s broken down into probably two and a half servings. And I’m going to top the pancakes with a fun little addition which adds an extra 8 grams of protein. Dry and Wet Ingredients

     The first thing I do is put together our dry ingredients. I’m going to be using three quarters cup of all purpose flour, a scoop of protein powder, one teaspoon of baking powder, half teaspoon cinnamon, a tablespoon of hemp seeds, and mix that together! For our wet ingredients, flax seeds are going to be what binds this together. So in a bowl I add one tablespoon of flax seeds to two and a half tablespoons of water. Mix that together and the flax will soak up the water after it sits for a few minutes. 

Secret Ingredient

     For the next step we need a high powered blender. The secret of this recipe is tempeh. I’m going to drop a whole bar or roughly two and a half servings or eight ounces of tempeh into the blender as well as a teaspoon of lemon juice and three cups of water. And blend! After a minute or two of blending this comes out thick and creamy. Then I add one and a half cups of the tempeh milk to a cup along with the flax mixture, about half a teaspoon of vanilla extract, a touch more lemon juice, and a pinch of salt.

Hot Cakes

     Before I mix these together I’m going to get a pan on the stove. Heat it up, add a bit of oil. While that is heating up I combine my mixtures. Once it is all mixed start adding pancakes to the pan! I am going to make a stack to save some for later because you can freeze them and then re-toast them when you want them! I’m also going to make an extra topping that I love. It is going to be a maple syrup topping with one serving of pb fit and three tablespoons of maple syrup! And that is it! Mix it up.

Taste Test

     These pancakes cook similar to regular pancakes. They’ll bubble through when they are ready to flip. Cook them until they are golden brown. You should end up with about nine or ten pancakes. They came out amazing. They are a little more dense than a regular pancake. But the taste is out of this world. You could add berries and fruit to them if you’d like. Ingredients
  

  • 3/4 cup all purpose flour
  • 1 scoop protein powder
  • 1 tsp baking powder
  • .5 tsp cinnamon
  • 1 tbsp hemp seeds
  • 1 tbsp flax seeds
  • 2.5 tbsp water
  • 8 ounces tempeh
  • 1 tsp lemon juice
  • .5 tsp vanilla extract
  • pinch salt
  • pinch oil
  • 3 tbsp pb fit
  • 3 tbsp maple syrup

Instructions
 

  • Add all purpose flour, protein powder, baking powder, cinnamon and hemp seeds to a bowl and mix.
  • In another bowl add flax seeds and water, let this sit and thicken.
  • In a high power blender I add tempeh, lemon juice and water, blend for a minute or two.
  • Add the tempeh mixture along with the flax mixture, vanilla extract, more lemon juice and salt.
  • Heat a pan on the stove with some oil. Combine the mixtures, then start cooking the pancakes.
  • While they cook I mix the maple syrup and pb fit to make a topping. Enjoy!
