How I’m Eating CHEAPER and HEALTHIER in 2025

Cheap and Healthy

     This recipe that I’ll be showing you today is an incredibly nutritious and filling soup, based on a recipe from “Will Cook For Friends.com”. This dish is also super cheap and I love the way it looks! It includes sweet potatoes, beets, the stem of the beets, the beet greens, onions and a bunch of other stuff. I have tweaked it a little bit, it’s not like the original recipe. And we are talking less than $3 for a cheap and healthy meal! Prep

     To start, all I’m going to do is wash and chop the beets, potatoes and onions. I’m going to toss the beet stems into a large pot with olive oil, onions, garlic and a bit of salt. Let those simmer for about five minutes. Then I’m going to add in some of my favorite spices, cumin, paprika, turmeric, more salt, and black pepper. Cook that down for another minute or so. Next I just toss in the sweet potatoes and beets, stir them around and let them cook for a minute. 

Cooking

     Now I add in a cup of farro. This farro specifically is an Italian grain, it’s loaded with fiber and protein, and it is nice and soft, it adds heartiness to soup. And it gives you a very similar rice texture but with a little better nutrition profile. Once the farro has been added I also add about three cups of veggie broth, and bring it to a simmer. Put the lid on, and let it cook on a very low heat, for about forty five minutes. After it is done cooking I’m going to add in a few more cups of water and the beet greens, let those simmer. 

Taste Test!

     Then plate it! I tossed some micro greens on top but you could add peppers, or a hot pepper, maybe even some croutons, whatever you want really. My main point is that this is incredibly easy, incredibly cheap, and incredibly good for you! This soup is awesome! None of the flavors are too intense, it is nice and mild. This tastes really healthy and fresh. This meal cost $2.60 to make! This soup is so delicious, cheap and healthy! You should give it a try! Watch the full video here!

Ingredients
  

  • beets

Instructions

  • Add cumin, paprika, turmeric, more salt, and black pepper. Let cook down for another minute or so. Add in potatoes and beets, stir and let them cook for a minute.
  • Add in farro and veggie broth, bring it to a simmer, let it cook for 45 minutes on a low heat. Put the lid on, add water, the beet greens and let simmer.
  • Add it to a plate with whatever toppings you prefer!
