Healthier Cake

     I could eat this cake every day and still lose weight. This is a boxed cake mix that I upgraded a little bit. We are going to knock out about 800 calories, add some fiber and protein. Blending

     The first thing we need is a blender. We are going to add some firm tofu, I drain the tofu then add 150 grams to the blender. Then I add 300 grams of unsweetened soy milk and quickly blend these together. Blend them well, no chunks! Then I add 15 grams of apple cider vinegar, blend again then just set it aside. Now I need about 90 grams of water and I add 14 grams of flax seeds to the water. Then mix it up and let it sit for about five minutes.

Baking Prep

     I preheat the oven for 350F degrees. Next I dump the cake mix into a large bowl (I got the yellow cake mix, I do think you can use any kind). Then I add 9 grams of psyllium husk to the mix. I’m not going to add it just yet but I got a cup of frozen blueberries ready. Then I also prepare my nine by thirteen baking dish by lining it with parchment paper. Now I add the flax and tofu mixtures to the cake mix and fold it in. Slowly add in the blueberries. Once everything is combined, dump the mix into the baking dish.

Taste Test

     Let it bake for about 30 minutes. I kept checking it in the oven and once it had a brown crust on top I stuck a toothpick in and it was ready. Then I took it out of the oven and let it rest on a rack for about 15 minutes. Next remove it from the dish and place it back on the rack for an hour to cool. Then once it is cool I cut it into ten servings. They came out cakey and spongey! If you wanted you could add frosting! One bar is 212 calories, 6.2 grams of protein, and 4.5 grams of fat. Ingredients

Instructions

  • Add cake mix to large bowl, add in psyllium husk and mix.
  • Cover 9×13 baking dish with parchment paper.
  • Add flax and tofu mixtures to the cake mix and fold. Slowly add in blueberries. Dump into baking dish and bake for 30 minutes.
  • Let it rest on rack for 15 minutes in dish then remove from dish and let cool on rack for an hour. Cut into 10 and enjoy!
