Lentil Soup

Simmer
I rinsed the lentils off. Then chopped up onions, carrots, and celery. Add it all to a pot, then add the lentils and water and seasonings. You can put garlic, peppers, whatever you prefer in this lentil soup! Let it cook. Simmer it down until it cooks through and the lentils are soft. You can eat part of this soup for lunch and then toss the rest into the fridge for the next days lunch.

Lentils are one of those foods that don’t get enough credit. One cup of cooked lentils has around eighteen grams of protein and around fifteen grams of fiber. And they are super cheap!
