Recently I made a pastrami sandwich using gluten. I wanted to keep working on vegan deli meat so today we are making a vegan roast beef, but this time we are using the lions mane mushroom. This is by far the meatiest vegan meat I have tried!! The Constancy of the dried lions mane mushroom when rehydrated is so incredibly close to meat!
