Are pancakes the best breakfast? After eating the best of the best vegan pancakes I would have to say yes because your favorite pancake recipes are REALLY good! I tested them all and then used what I learned from the best to make my own.

My Pancake – the fluffiest, tastiest, vegan protein pancake
(8–10 pancakes)
Flax egg:
* 1 tbsp ground flax seed
* 3 tbsp water
Buttermilk:
* 1½ cups soy milk
* 2 tbsp lemon juice
Dry:
* 1 3/4 cups all-purpose flour, sifted
* 1 tbsp vegan protein powder (unflavored or vanilla)
* 2 tbsp baking powder
* 2 tbsp sugar
* ½ tsp salt
Wet:
* ¼ cup vegan sour cream (room temp)
* 2 tsp vanilla extract
* 2 tbsp vegan butter, melted hot
For cooking:
* Refined coconut oil

Method:
1. Mix flax + water, rest 10 min
2. Mix soy milk + lemon juice, rest while flax sets
3. Sift dry ingredients together
4. Whisk sour cream + vanilla into buttermilk, add flax egg, then pour in hot melted butter
5. Fold wet into dry until just combined — lumps are fine
6. Rest batter 5–10 min, don’t stir after
7. Cook in coconut oil over medium heat, ~2–2½ min per side, flip once
