Sweet Potato Dessert
Today I’m going to make a sweet potato dessert that you could probably eat daily. They’ll be high in protein and pretty simple to make! If you like this recipe be sure to check out this one too! and this one!

Ingredients
To get started I’m going to microwave my sweet potato in a popcorn cooker thing. If you don’t want to microwave it you could roast it! While mine is microwaving I’m going to get my ingredients started in a food processor. I drain and press a block of firm tofu, I need about 275 grams of the tofu. Then add the tofu to the food processor along with 75 grams of allulose, 10 grams of vanilla extract, 6 grams of espresso powder, and 6 grams of salt. My potato is done in the microwave so I take it out, remove the flesh from the inside and weigh it.

Food Processor
Next mash the potato then add it to the food processor. I added 225 grams of sweet potato to the processor. Then in a bowl I add 60 grams of cocoa powder, 115 grams of soy protein isolate, 22 grams of tapioca starch, and 4 grams of baking powder. Give that a good stir. Then I pulse together the ingredients in the processor. I add in 65 grams of hot water while it’s processing. Then pour it into the dry ingredients and fold them together. It was very thick so I added a bit more water, then I added 25 grams of dark chocolate chips and mix.

Taste Test
Then I line an eight by eight pan with parchment paper, I have my oven preheated for 350ºF. Bake them for about twenty five minutes. When they are done I cut them into nine squares and then let them rest overnight. These brownies come in at 139 calories, 15 grams of protein, 3.8 grams of fat and 11 carbs. I toss them into the microwave for about 30 seconds and they taste like healthy brownies! The consistency is awesome. Give these a try! Watch the full video here!

Ingredients
- 225 grams sweet potato
- 275 grams firm tofu
- 75 grams allulose
- 10 grams vanilla extract
- 6 grams espresso powder
- 6 grams salt
- 60 grams cocoa powder
- 115 grams soy protein isolate
- 22 grams tapioca starch
- 4 grams baking powder
- 65 grams hot water
- 25 grams dark chocolate chips
Instructions
- Cook sweet potato in microwave.
- Drain and press firm tofu, add to food processor with alulose, vanilla extract, espresso powder, and salt. When potato is done, remove skin, mash it, weigh it, and add it to processor.
- In bowl add cocoa powder, soy protein isolate, tapioca starch, baking powder and stir.
- Pulse food processor and add in hot water. Then pour everything into dry ingredient bowl and fold together. Add chocolate chips.
- Line 8×8 pan with parchment and preheat oven to 350ºF. Bake for 25 minutes.
- Cut into 9 squares and let them sit overnight. Enjoy!
