Is Tofu Better Than Mozzarella?

     Could tofu replace mozzarella cheese? Let’s find out! I’m going to take our tofu, cut it into four blocks. Toss them into a saucepan and cover them with salt and a teaspoon of lactic acid. Now we need to add enough water to cover the tofu. Turn on the heat, bring it to a simmer. Once it is at a simmer, change it to low heat, cover it, and let it rest for ten minutes. Italian Sausage Pizza

     I’m using this tofu to make an Italian sausage pizza! So while I wait for the tofu cheese to finish, I’m going to toss together a super easy, high protein, vegan, Italian sausage. I start with a large bowl, in it I add half a cup of textured protein crumbles, a pinch of Italian seasoning, a teaspoon of dried parsley, a quarter teaspoon of marjoram, a half teaspoon of smoked paprika, a quarter teaspoon of red chili flakes, a pinch of fennel seeds, a quarter teaspoon of garlic powder, onion powder, a pinch of salt, black pepper, and a tablespoon of olive oil. Mix it up really well, then add in two teaspoons of potato starch, give it another mix. 

Pizza Sauce

     Next you want to add in hot water. Cover it, and let it rest for about five minutes. While this is resting I’m going to make my pizza sauce. To do that, I toss a can of san marzano tomatoes into a large container with some olive oil, fresh basil, a pinch of salt, and blend. Set the sauce aside now and let’s grab our cheese. At this point, to get the texture close to mozzarella, I’m going to try to squeeze out as much liquid as possible. I grab some cheese cloth, toss in the tofu, wrap it up and squeeze as tight as I can. Let this sit and drip dry in the strainer for now.

Cook Sausage

     At this point I quickly fry up the sausage in a hot pan with a bit of olive oil. Let the starch kind of crust up a little bit. Now we are ready to make the pizza! I have the oven preheated for 400ºf. With a hot griddle in the oven. I grabbed a pre-made pizza crust, topped that with the sauce, some sausage, then added the tofu cheese! It looks awesome. Add a pinch of olive oil overtop, then toss it in the oven for around ten minutes. Tofu doesn’t melt, so mozzarella wins that but, let’s see about taste!

Taste Test

     Wow this tastes great! It has the cheesy, tomato, basil taste! The cheese has that squeakiness like mozzarella. And the same mouth feels too. This tofu works amazingly in place of real cheese. It’s okay that it did not melt, and it does not have a cheese pull because it still tastes amazing! And just like cheese! There is almost no fat, there is fiber in it, a little bit of carbohydrates, it is mostly protein! You have to give it a try! Watch the full video here!

Ingredients
  

  • 1 block extra firm tofu
  • salt
  • 1 tsp lactic acid
  • .5 cup textured protein crumbles
  • pinch Italian seasoning

  • 1/4 tsp red chili flakes
  • pinch fennel seeds

  • 1/4 tsp onion powder
  • pinch black pepper
  • olive oil
  • 2 tsp potato starch
  • 1 can san marzano tomatoes
  • fresh basil

Instructions
 

  • Cut tofu into four blocks. Toss blocks in saucepan then add salt, lactic acid, and water.
  • Turn on the heat, bring it to a simmer. Once at a simmer, change it to low heat, cover it, and let it rest for 10 minutes.
  • In bowl add textured protein crumbles, Italian seasoning, dried parsley, marjoram, smoked paprika, red chili flakes, fennel seeds, garlic powder, onion powder, salt, black pepper, and olive oil.
  • Mix that well! Then add potato starch and mix again.
  • Add in hot water, cover it, let it rest for 5 minutes.
  • Add can of san marzano to a container with basil, olive oil and salt, then blend. Set this aside.
  • Grab tofu and put it in a cheese cloth. Squeeze it out (remove as much liquid as possible). Let it drip dry.
  • Fry up sausage in some olive oil on a hot pan.
  • Preheat oven to 400ºf.
  • Add sauce to pizza crust, then sausage, then the tofu and some olive oil overtop. Let this cook for about 10 minutes. Enjoy!
