Better Tofu Scramble
One of the great things about tofu scramble is how incredibly simple it is to make! It turns out delicious but wouldn’t it be nice to make it better? It already tastes like eggs to me but the consistency is off! If you like this recipe, be sure to check out this one too! and this one!

Tofu Prep
I start by draining my case of extra firm tofu, then putting it in a mixing bowl. Then give it a good squash with a potato masher or fork. Next in a measuring cup I add a half cup of cashew milk. Then I add a half teaspoon of turmeric to the tofu directly and a half teaspoon of turmeric to my liquid broth.

Flavoring
I also add half a teaspoon kala namak black salt to the milk, a quarter teaspoon vegan chicken broth, and a half teaspoon kappa carrageenan. Give the milk a good mix/blend. And also stir up the tofu. Then combine the broth and tofu. I add in a pinch of mushroom powder and keep mixing. Once it is all mixed together I heat a frying pan and add about a tablespoon of oil. Then add in the egg!

Cooking and Tasting
Once it was simmering and a lot of the liquid cooked down, I took it off of the heat and allowed it to rest for about ten minutes. I was mixing and trying to fluff it up while it cooled and rested. And then it’s ready to eat! It’s so good! Compared to the regular tofu scramble, this is way more egg like! You have to give this a try! Watch the full video here!

It’s Time We Make Tofu Scramble Better
Ingredients
- 1 container extra firm tofu
- 1/2 cup cashew milk
- 1 tsp turmeric
- 1/2 tsp kala namak black salt
- 1/4 tsp vegan chicken broth
- 1/2 tsp kappa carrageenan
- pinch mushroom powder
- 1 tbsp oil
Instructions
- Drain tofu then put it in mixing bowl. Squash it with fork or masher.
- Measure out cashew milk then add turmeric to tofu and to the milk. Also add to the milk, kala namak black salt, vegan chicken broth, and kappa carrageenan. Mix up milk. And stir tofu.
- Combine milk/broth and the tofu, add mushroom powder. Once mixed together, heat up a frying pan with some oil.
- Add in the egg, once it is simmering and a lot of liquid has cooked down, take it off the heat. Allow it to rest for about 10 minutes. Mix and fluff while it rests. Enjoy!
