Meaty Mushroom
So I’ve used the lion’s mane mushroom quite a bit in the past. I use it because of the way that it pulls apart and it also has this nice kind of seafood-y flavor. But one thing that I have discovered recently in some testing is that when you don’t cut the lion’s mane mushroom and you rehydrate it, it has an incredibly meaty texture! Mushroom Prep
I start by slicing my lion’s mane mushrooms incredibly thin. Make sure that you slice against the grain, down across the top of the mushroom all the way through the base. Get these as thin as you can! Once they are sliced, throw them into a saucepan. And then cover them with one and a half cups of cold water, one cup of soy sauce. Now mix up with an additional cup of water, one teaspoon marmite, one teaspoon molasses, one tablespoon mushroom powder, one tablespoon beef stock seasoning (the one I’m using is %100 vegan!), and two tablespoons of olive oil.
Hydrating Mushrooms
Now we need to pour that over the mixture and you will really see the mushrooms soak this stuff in. Turn it up to about a medium heat, bring it up to a simmer, make sure all the mushrooms are completely submerged or at least coated in liquid. Then throw the lid on it, checking it about every ten minutes or so flipping any pieces over for the next half an hour. They already look so meaty but they are extremely over hydrated mushrooms.
So we are going to transfer the mushrooms over to a large cutting board. I laid them out in a rectangle shape about the size of a second cutting board I have. I put that second cutting board on top of the mushrooms and then two cast iron skillets. You could use books or whatever you want to just press these down and press out the liquid for about another half an hour. After they have been pressed I put some oil in a skillet and throw it on a medium heat and add them in. I saute them up for a minute.
Taste Test
If you want, add some peppers, onions and cheese, turn it into a cheese steak! I am going to toast a bun and make a sandwich. This looks insanely good! Ingredients
- lion's mane mushroom
- 1 cup soy sauce
- 1 tsp marmite
- 1 tsp molasses
- 1 tbsp mushroom powder
- 1 tbsp beef stock seasoning
- 2 tbsp olive oil
Instructions
- Slice mushroom extremely thin, slice against the grain! Down across the top of the mushroom all the way down through the base.
- Once sliced toss them into a saucepan and cover them with cold water, add soy sauce and mix in additional water, marmite, molasses, mushroom powder, beef stock seasoning and olive oil.
- Pour that over the mixture. Turn it up to a medium heat, bring it to a simmer, make sure all the mushrooms are submerged or at least coated in liquid.
- Throw the lid on it, checking it about every 10 minutes, flipping pieces over for the next 30 minutes.
- Add the mushrooms to a cutting board, lay them out and use something to flatten them out and dehydrate them a bit. Let them sit for about 30 more minutes.
- Add some oil to a pan and put it on a medium heat and add in the mushrooms. Saute them for a minute. Enjoy!
