Mac and Cheese – 3 Ways without the Cheese!

     Making dairy free mac and cheese can be incredibly easy! Sure, you can buy store bought ones but some of the homemade recipes are just as easy and you can find all the ingredients at most regular grocery stores. Soy Milk and Nooch Mac

     The first thing I do is get some elbow macaroni (I have enough for all three of these macaroni and cheeses) into salted, boiling water. I then place three tablespoons of vegan butter on a pan and melt that down. Next I add in three tablespoons of all purpose flour and mix it around. Once that has cooked and got a little color to it it is time to add in whatever dairy free milk you like. I am using two cups of soy milk, mix it around and bring it to a boil!

     When it is time to drain the macaroni I save the water. I add some salt, a teaspoon of apple cider vinegar, a quarter cup of nutritional yeast, garlic powder, onion powder, mustard powder, into the cheese sauce and give it a good mix. Add some macaroni to a bowl, then some cheese sauce and mix it in! I sprinkled on some black pepper and covered it up!

Potato Mac

     For this next version we will be using a potato, peeled. After it is peeled, I cube it then toss it into a large blender then whatever dairy free milk you prefer. I’m using one cup of oat milk, add that to the blender along with two tablespoons of olive oil. You want to use a high speed blender, if you don’t have one you are probably going to have to cook it afterwards. I blend on high until it’s incredibly smooth. After it has blended for a little I add a big pinch of salt then continue blending. Now straight to the blender I add garlic powder, onion powder, mustard powder (if you want), a little black pepper, and a pinch of apple cider vinegar. Give this a quick blend and then we’ll pour it over the macaroni. Cover it up and let’s move on.

Peanut and Vegan Yogurt Mac

     For this last recipe I add a heaping quarter cup of peanuts into a saucepan along with two cups of water, some salt, and bring that to a boil. I let those sit and boil for ten minutes then I strain them and rinse them off with cold water. Now I put the peanuts into a food processor along with about a cup of that pasta water and blend. Then I add in a cup of almond milk yogurt and a little more salt then continue to blend. Next it needs to be heated so I pour it into a pan and add garlic powder, onion powder, mustard powder, and black pepper. Stir that and let it thicken up for a minute.

     The soy milk and nooch mac and cheese is really good. It’s creamy, and the cheesy flavor is nice, and not too intense. The sauce sticks really well to the noodle. It reminds me of a baked home style mac and cheese. The potato mac and cheese is also really good! It is a little salty, super creamy. Ingredients
  

Soy milk and nooch mac

  • elbow macaroni
  • 3 tbsp vegan butter

Potato mac

  • elbow macaroni
  • 1 cup oat milk
  • 2 tbsp olive oil
  • tbsp salt
  • pinch garlic powder
  • pinch onion powder
  • pinch mustard powder
  • pinch black pepper
  • pinch apple cider vinegar

Peanut and vegan yogurt mac

  • 1/4 cup peanuts
  • elbow macaroni
  • 1 tbsp salt
  • 1 cup starchy water
  • 1 cup almond milk yogurt
  • pinch garlic powder
  • pinch onion powder
  • pinch mustard powder

Instructions
 

Soy milk and nooch mac

  • Boil macaroni. Add vegan butter to pan and melt it. Once melted add all purpose flour and mix.
  • Once that has cooked for a minute add soy milk, mix and bring to a boil.
  • Drain macaroni and save the water for later.
  • Add apple cider vinegar, salt, nutritional yeast, garlic powder, onion powder, mustard powder, into the cheese sauce and mix.
  • Add macaroni to a bowl and spoon in some cheese sauce. Top with black pepper and enjoy!

Potato mac

  • Peel, cube potato then toss it into high speed blender with oat milk and olive oil.
  • Blend on high until it's incredibly smooth. Add salt, garlic powder, onion powder, mustard powder, black pepper, apple cider vinegar and blend again.
  • Pour over macaroni and enjoy!

Peanut and vegan yogurt mac

  • Add peanuts to saucepan along with water and salt then bring it to a boil.
  • Let them boil for ten minutes. Then strain them and rinse them with cold water.
  • Put the peanuts into a food processor along with that pasta water saved from earlier then blend.
  • Add it to a pan with garlic powder, onion powder, mustard powder, and black pepper.
  • Stir that and let it thicken, enjoy!
