Rehydrated Mushroom Burger

     Dehydrated mushrooms make a really great meat replacement! There’s a few things that happen in dehydrated mushrooms that make them more fiber-y and have more of a bite or chew which resembles closer to beef than just about anything. Today I’m going to make a rehydrated mushroom burger. You could do a simple broth mixture just using a beef flavored broth mix, mine has no real beef! Rehydrating

     Let’s start, on the heat, with two cups of water in a saucepan, one tablespoon of mushroom extract or mushroom seasoning, one tablespoon of nutritional yeast, one tablespoon olive oil, one teaspoon molasses, half teaspoon liquid smoke, half teaspoon garlic powder, half tablespoon soy sauce, and about a cup of dried shiitake mushrooms. Once the mushrooms are added, turn the heat to low, put the cover on and let them simmer for about twenty minutes. When they are done hydrating I strain them, and mince them pretty fine. You want to end up with about four ounces of rehydrated mushrooms. 

Cooking

     Next we add our minced mushrooms into a very lightly oiled skillet. Let them brown for a minute or two. This kind of dries up the exterior or the mushrooms which allows our plant-based mix to stick to the mushrooms. At this point I add the beyond burger, mine is a refrigerator de-thawed beyond burger so it’s very cold. Then combine the burger and mushrooms. At this point I am going to make five quarter pound burgers. I’m going to season them very simply, I sprinkle on kosher salt and crack fresh black pepper. Now onto an iron skillet, sear them on both sides. 

Tasting

     Throw them on our burger, add our toppings and now we have an insane beyond veggie mushroom burger! This burger is really good! It has such a nice meaty bite. And adding the mushroom gives it more chew! And you also get that extra smokey meaty mushroom flavor added in. This recipe came out awesome, you should try making it for your family and friends! Ingredients
  

  • 1 tbsp mushroom extract or mushroom seasoning
  • 1 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 1 tsp molasses
  • .5 tsp liquid smoke
  • .5 tsp garlic powder
  • .5 tsp soy sauce
  • 1 cup dried shiitake mushrooms
  • 1 beyond burger
  • kosher salt
  • black pepper
  • 2 cups water

Instructions
 

  • Add water to saucepan along with mushroom extract, nutritional yeast, olive oil, molasses, liquid smoke, garlic powder, soy sauce, and dried shiitake mushrooms.
  • Turn heat to low, add a cover, simmer for 20 minutes.
  • Strain and mince mushrooms. Then add to oiled skillet and let them brown a little.
  • Take mushrooms out of skillet, and mix with beyond burger.
  • Separate into 5 quarter pound burgers, season with kosher salt and black pepper.
