Watermelon Bacon
I have made a bunch of different bacon videos! I am always trying to think of the next best bacon! So I thought I wanted to make watermelon bacon! I did some research and people have made watermelon bacon before. I am going to take a similar path to what some other people have tried! If you like this recipe check out this one too! and this one!
Melon Prep
So I have a quarter of a watermelon here. The first thing we have to do is clean the watermelon and slice the skin off. I use the flat side of the watermelon to cut a few steaks. I cut a little less than half an inch thick. Once I have it all sliced I get out two baking sheets and line them with parchment paper. Then I cut out my bacon slices. I make the bacon about two inches wide. We only want them about five or six inches long. When they are all cut I line them up on the baking sheet.
Brine Mixture
Then we need to make our brine mixture. In a mason jar I add some dark soy sauce, a touch of liquid smoke, a touch of maple syrup, olive oil, mushroom seasoning, onion powder, and some smoked paprika. Then mix it together and brush both sides of each watermelon slice, making sure it’s completely covered. Place these into the oven at 175ºf, or the lowest your oven will go. Now they need to dehydrate for the next seven to ten hours. Pay attention to them. You want a little meatiness left but you want them to firm into like a fruit leather.
Taste Test
Once they were done I took them out of the oven, tossed them into the fridge and let them sit overnight. On their own they look really good! But they do feel a little leathery. I tossed a couple of the bacon slices into a pan with some oil to see how they’d turn out. There is some meaty fiber to it! Frying them lightly in some oil makes them perfect! Making Bacon From Watermelon
Ingredients
- 1/4 watermelon
- soy sauce
- liquid smoke
- maple syrup
- olive oil
- mushroom seasoning
- onion powder
- smoked paprika
Instructions
- Clean the watermelon slice and remove the skins. Use flat side of watermelon to cut steaks.
- Line two baking sheets with parchment paper. Cut out all the bacon slices then line them up on the parchment.
- In mason jar I add soy sauce, liquid smoke, maple syrup, olive oil, mushroom seasoning, onion powder, and smoked paprika. Mix together and then brush both sides of every watermelon slice.
- Place into the oven at 170ºf (or whatever your lowest is). They need to dehydrate for 7 to 10 hours. When they are done fry them up in some oil and enjoy!
