Cinnamon Rolls
Last week I made some high protein bread, it came out incredible! And in that video, I promised cinnamon rolls. Each slice of bread I made came to 6.2 grams of protein for 145 calories. We’re going to up the protein in the cinnamon rolls so that you can eat and enjoy maybe having them after a workout. This is going to be based on the same recipe from Bora over at All Purpose Veggies, where she made that tofu bread. If you like this recipe, check out this one too! and this one!
Prep
To get started I add four cups of flour, two tablespoons of gluten flour, one scoop of pea protein powder, a whole package of instant dry yeast, a teaspoon of salt, and five tablespoons of sugar into my mixer. Give these dry ingredients a quick mix. Next I add one whole package of extra firm fresh silken tofu. Start to mix again while slowly adding five tablespoons of room temperature or warm water. I’m going to let this rise in my toaster oven so I set it to 100ºf.
Dough Making
At this point, the dough ball is ready. So I get a bowl nice and oiled, add the dough in, cover it, and put it in the toaster oven. It needs to rise for about an hour and a half. In the meantime we can make a simple, healthy, vegan butter for the spread. In a little bowl add a tablespoon of apple cider vinegar, a teaspoon of PB powder and mix those together. Next I melt a cup of coconut oil and combine it with the apple cider vinegar and PB. To this I add three quarters of a cup of brown sugar, two tablespoons of ground cinnamon and whisk! I put this in the refrigerator to set up a little because it is too warm.
Rolling
When the dough is done rising I flour up my work surface a little bit. I roll out my dough about ten/twelve inches in width then about double that for the length. I try to keep it square the best that I can. Time to dump on the cinnamon butter, I used almost all of mine. I spread it out evenly on the dough. Next we roll it up. I have two baking dishes, bread pans that I’m going to rub some coconut oil in. I cut the ends off of my cinnamon roll, then slice down the middle, then I slice each half into thirds. Then add three cinnamon rolls to each pan.
Rising
Cover them, and then in the air fryer they go! These need to rise for about an hour. Once they have risen we can take them out. Next we need to bake them at 350ºf for about fifteen minutes. They are coming out so nice, I cover them up and bake them again for about another ten minutes. Take them out of the oven, dump them onto a plate and let the top become the bottom. We just need these to cool down now, while they cool down I’m going to make my topping. The topping is half of a cup of powdered sugar, one tablespoon of malk, a drop of vanilla extract, and whisk!
Taste Test
This will firm up pretty quickly, so I pour it right onto the cinnamon rolls. Each one of these comes out to 643 calories. They contain nineteen grams of fat, zero cholesterol, twenty grams of protein. These are fluffy and delicious! This came out like any good cinnamon bun! The inside has that soft doughy texture. Making Cinnamon Rolls, But Healthy Enough To Be Dinner
Ingredients
- .5 cup powdered sugar
- 1 tbsp malk
- 1 drop vanilla extract
- 4 cup flour
- 2 tbsp gluten flour
- 1 scoop pea protein powder
- 1 package instant dry yeast
- 1 tsp salt
- 5 tbsp sugar
- 1 package extra firm fresh silken tofu
- 5 tbsp water
- 1 tbsp apple cider vinegar
- 1 tsp PB powder
- 1 cup coconut oil
- 3/4 cup brown sugar
- 2 tbsp ground cinnamon
Instructions
- Add flour, gluten flour, pea protein powder, dry yeast, salt, and sugar to a mixer and mix.
- Add tofu, start to mix again while slowly adding water.
- Set toaster oven to 100ºf.
- Oil inside of bowl and add in dough ball, cover it, and put it in the toaster oven. Allow it to rise for an hour and a half.
- In small bowl add apple cider vinegar, PB powder and mix. Melt coconut oil, mix it in as well. Add in brown sugar, ground cinnamon and whisk. Let sit in the fridge.
- Add flour to work space, then roll out dough. Mine was about 10/12 inches in width and about double in length.
- Add on cinnamon butter, spread it evenly. Then roll it up. I oil two baking dishes.
- Cut the ends off the roll, then cut it down the middle, then cut each half into thirds. I add three rolls to each pan.
- Cover them and put them in the air fryer for about an hour. Once they have risen take them out and bake them at 350ºf for 15 minutes.
- After the 15 they look nice but I cover them back up and put them back in for another 10 minutes.
- Dump them onto a plate and let the top become the bottom. Let them cool.
- For a topping we mix together powdered sugar, malk, and vanilla extract. Pour that overtop and enjoy!
