Making Vegan Fish N Chips from CELERY ROOT

Celery Fried Fish

     There’s been a few videos going around recently where people have turned a celery root into a fried fish! Today I want to test that because the celery root does not resemble a fish! This is going to be pretty easy so let’s get started on the celery fried fish. If you like this recipe be sure to check out this one too! and this one!

Celery Prep

     I have my oven preheated for 400ºf. We are going to clean and roast the celery roots. I use a knife to shave off the outside skin. Once they are all skinned I quickly rinse them off. After that I cut them into their fish shapes. Now I add my slices into a bowl and cover them with olive oil, I also add some sea salt, and kelp granules. Next I line a baking sheet with some parchment paper and then add the slices onto the paper. I drizzle the leftover oil with the kelp in it over top of the slices. Time to throw those into the oven and roast them for thirty minutes.

Marinade

      I set them off to the side for a moment so I can make a marinade. So in a bowl I add about half a cup of olive oil, a half cup of rice wine, a half cup of a regular cooking wine, I mince a tablespoon of capers and add those in, some kelp powder, lemon zest, squeeze one whole lemon, and some sugar. Now I mix the marinade and drop in the slices. Cover up the bowl and let it refrigerate for six hours! 

Fry The Fish

     I have about an inch of vegetable oil in a pan, I’m going to heat it up to about 375ºf. I’m going to be making a beer batter so I am going to fill one bowl with some flour (enough flour to cover everything). And I have another bowl that I am filling with cornstarch. I add a teaspoon of baking soda and a teaspoon of sea salt to the flour and give it a quick whisk.

     I have a rome city IPA (you would usually want to use a cheap lager, this is just what I had), I add it into the flour and whisk until it’s like a nice wet batter that’ll stick. Time to add a slice into the dry batter and get it covered, then into the wet batter, let it drip off, then into the hot oil! These need to fry front, and back, a few minutes on each side. Repeat until your slices are all fried!

Taste Test

     And they are done! They look amazing, so much like fried fish! They taste pretty good too! There is definitely a fishy flavor. The celery flavor does shine through though. But this celery root flakes like a real piece of fish would! This is one of the better fish and chips recipes I have tried. This is so tasty you should try to make it for your family and friends! Ingredients
  

  • celery roots
  • 1 cup olive oil
  • 1 tbsp sea salt
  • kelp granules
  • .5 cup rice wine
  • .5 cup cooking wine
  • 1 tbsp capers
  • kelp powder
  • 1 lemon
  • sugar
  • vegetable oil
  • flour
  • cornstarch
  • 1 tsp baking soda
  • 1 beer

Instructions
 

  • Preheat oven for 400ºf.
  • Shave off skin of celery roots, rinse them off, and cut them into fish slice shapes.
  • Add slices to a bowl with olive oil, sea salt, and kelp granules.
  • Line baking sheet with parchment paper and add the slices to the paper. Put them in the oven for 30 minutes.
  • In a bowl add olive oil, rice wine, cooking wine, capers, kelp powder, sugar, lemon zest and lemon juice. Mix this together.
  • Add the fish slices into the bowl, then cover and refrigerate it for 6 hours.
  • Add vegetable oil to pan and heat it to 375ºf.
  • Fill one bowl with flour and another bowl with cornstarch. Add baking soda, sea salt and beer to flour and whisk.
  • Get a fish slice covered in dry batter, then to the wet batter, let it drip, now into the hot oil.
  • Let them fry for a few minutes on the front and the back. Repeat until all the slices are done. Enjoy!
