Black Bean Brownies
So the one thing that I haven’t lost since losing all my weight is my sweet tooth. I love having sweets around the house and now I kind of want sweets that are probably a little bit healthier. Blending
First I drain my black beans but we are going to save the liquid inside the can. Then I am going to mix one tablespoon of chia seeds, with two tablespoons of the thick liquid from the can and set it aside. The flour we are going to be using is rolled oats, I add half a cup of that to the blender and blend until smooth. At this point we are going to add in two tablespoons cocoa powder, a half teaspoon of salt, a half teaspoon of baking powder, and one scoop or three tablespoons of your favorite protein powder and blend. Now add in the black beans and pulse. Next in the blender, we need a quarter cup of the runny, natural peanut butter, a half a cup of sweetener, I’m using a combination of maple syrup and agave.
Baking
At this point we need to add the chia seeds and blend everything until it is smooth. It’s pretty thick so I add about a tablespoon at a time of a liquid until we get the right consistency. Now I need to get the oven preheated for 350ºf. And I grab an eight by eight baking sheet, line it with parchment paper on the bottom. Add the brownie mix into the sheet, before I smooth it out I add in some dairy free chocolate chips. Now I press and smooth it out and also add some dollops of peanut butter to the top and swirl it through.
Topping
That goes into the oven at 350ºf for fifteen to twenty minutes. After eighteen minutes I take it out and it looks really good. It is firm but still soft, it needs to cool down. But I also want to add a topping. This is optional! In a bowl I add three tablespoons of coconut oil, a quarter cup of coconut cream, a third cup of cocoa powder, and two cups of powdered sugar, whisk this together until it whips into a cream. Now we get our brownie and add the topping on then let this whole thing go into the fridge for about fifteen minutes.
Taste Test
After it has sat it got nice and firm, I cut it into twelve squares. This tastes like an awesome gooey brownie! There is no hint of bean at all! It just tastes like chocolate! It’s dense but fluffy, cake-y and so good. The frosting and chocolate chips are great. You’d never know this was made from black beans. You should make these black bean brownies! One Can Of Black Beans Will Change How You Think About Brownies
Ingredients
- 1 can black beans
- 1 tbsp chia seeds
- .5 cup rolled oats
- 2 tbsp cocoa powder
- .5 tsp salt
- .5 tsp baking powder
- 3 tbsp protein powder
- 1/4 cup natural peanut butter
- .5 cup sweetener
- dairy free choc chips
Topping
- 2 cup powdered sugar
- 1/3 cup cocoa powder
- 3 tbsp coconut oil
- 1/4 cup coconut cream
Instructions
- Drain black beans but save the liquid in the can. Mix chia seeds with liquid from can and set it aside.
- Add rolled oats to blender and blend until smooth. Add in cocoa powder, salt, baking powder, and protein powder blend again. Add black beans then pulse.
- Add peanut butter, chia seeds and sweetener to blender and blend until smooth. It's thick so add liquid until it is the right consistency.
- Preheat the oven 350ºf.
- Grab 8×8 baking sheet, line it with parchment paper and add in the brownie mix, then the choc chips. Press and smooth it out and then add some peanut butter on top and swirl it in.
- Bake for 18 minutes then take it out and let it cool.
Topping
- In a bowl add coconut oil, coconut cream, cocoa powder, and powdered sugar and whisk until it whips into a cream.
- Add topping to brownie and put in the fridge for 15 minutes. Then cut into slices and enjoy!
