Chickpea Granola
Today I’m making one of my favorite breakfasts, granola. We are making it grain free and from chickpeas!! First things first we are going to open, drain, and rinse the chickpeas, I’m using two cans. Next I’m going to toss these into an air fryer at about 400ºF for about twenty to thirty minutes. We need them to get crispy. After about forty minutes I dropped the heat from 400ºF to 200ºF for thirty five minutes or so and I just brought it back to 400ºF for a few minutes. Adding Ingredients
Once they are crunchy I put them in a bowl and smash them up a bit. To them I add half a cup of pecans (I chop up a quarter of them), a quarter cup of chopped pumpkin seeds, a little bit of ground flax seed, a half teaspoon of chia seeds, a half teaspoon of cinnamon, and half teaspoon natural sea salt. Then we want to mix this and make sure that everything is evenly distributed. Then I add a quarter cup of melted coconut oil and quickly mix it in. I also add a quarter cup of maple syrup, and a pinch more cinnamon and mix again.

Baking
At this point I am going to line the baking sheet with some parchment paper. Pour the chickpeas out and make sure they are even. But you want it to be crowded because it is all going to stick together. Then I just toss them into the air fryer on the bake setting. 350ºF for about twenty to twenty five minutes. When I take them out I cover them with a piece of parchment paper and let them rest overnight.

Taste Test
The next day I break it up, drop some into a bowl and give it a taste. It turned out amazing! It is sweet, very crunchy. And so good on its own. How Chickpeas Are Changing Breakfast Forever
Ingredients
- 2 cans chickpeas
- 1/2 cup pecans
- 1/4 cup pumpkin seeds
- flax seeds
- 1/2 tsp chia seeds
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup coconut oil
- 1/4 cup maple syrup
Instructions
- Drain and rinse chickpeas. Air fry at 400ºF for 20-30 mins.
- After 40 mins drop the heat to 200ºF for 35 mins. Then back to 400ºF for a few mins.
- Put chickpeas in a bowl and smash them up a bit. Then add pecans, pumpkin seeds, ground flax seeds, chia seeds, cinnamon, and salt. Mix then add coconut oil, maple syrup and mix again.
- Line baking sheet with parchment paper. Pour chickpeas on and make sure they are crowded like one big slab.
- Into the air fryer on bake setting at 350ºF for 20-25 mins. Take them out and cover them with parchment and let sit overnight. The next day, break it up and serve!
