One Can of Chickpeas Could Change The Way You Think About Meatloaf

   Vegan Meatloaf Recipe

  Are you trying to stay away from meat, but missing a good meatloaf? Well I have a vegan meatloaf recipe for you! It contains no meat, no gluten, and no processed textured fake meats at all! It’s unbelievably easy to make, super filling, and will give you some of those great meatloaf leftovers! It all starts with some chickpeas. Let’s Go

     For this vegan meatloaf recipe we will need two cans of chickpeas, and the liquid inside the cans. Firstly, drain the chickpeas and save the aquafaba (that is what the liquid inside the can is called). The base of this loaf will be the chickpeas, along with some different vegetables and mushrooms. Then I wash and chop about a cup of mushrooms. After I chop them nice and fine, I toss them into a pan and cover them with water and a pinch of salt.

     Turn the heat on to a medium/high heat and bring it to a simmer. You want to let all the water basically cook off. Then I grab about half of a yellow onion, three peeled carrots, half a peeled beet, and chop them all up. Back to the chickpeas, I drop them into a food processor. I process them a bit then add the beets, most of the carrots, and some of the onion. Then process that all together. 

Ingredients To Add

     Transfer everything over to a large bowl, next add in the rest of the carrots and onions. Now I chop a stalk of celery, pretty finely and toss it into the bowl. I realized I also wanted to add in garlic so I chop up four cloves and toss those in the bowl as well. At this point the mushrooms are almost done cooking so I add in about a tablespoon of olive oil. I toss them around in that olive oil then I add them right into the meat. Now for the dry ingredients, I add about a cup and a half of oats. Also add in about three tablespoons of ground flax, a tablespoon of nutritional yeast, half a tablespoon of starch, about a teaspoon of thyme. Mix everything together well. 

Wet Ingredients

     Now add about half a cup of the aquafaba we saved. Then two tablespoons of ketchup, a tablespoon of yeast extract, a tablespoon of bbq sauce, a teaspoon of liquid smoke, a teaspoon of smoked paprika, and a pinch of black pepper. Next I get in there and mix everything with my hands, squishing it all together. Preheat the oven at 375º. Time to get out our loaf pan, I use an eleven inch pan. Add some olive oil, making sure it’s spread throughout the whole pan. I then line the sides and bottom of the pan with a piece of parchment paper. Now we add the meat in, layer by layer, packing it in. 

Baking Time

     Add it into the oven and allow it to bake for thirty minutes. While it’s baking we will make the glaze. To a bowl I add a quarter cup of ketchup, a few tablespoons of bbq sauce, and about a tablespoon of brown sugar. Mix this together well. When it’s time, take out your meatloaf and overtop, add a heavy coating of the glaze. Once the glaze is on, I add the meatloaf back to the oven and allow it to cook for about another thirty minutes.

Chow Down!

     The roast is done! When I took it out of the oven I let it sit for about ten minutes because it was still a little soft. The longer it sits and cools, the more firm it gets. Cut yourself a piece and enjoy! It has a nice meaty texture, maybe a little softer than a regular meatloaf. All the veggies inside give an awesome tasty crunch to each bite. Ingredients
  

  • 2 cans chickpeas drained liquid saved (aquafaba)
  • 1 cup mushrooms chopped
  • 1 tsp olive oil
  • 1/2 sweet onion
  • 3 carrots peeled and chopped
  • 1 Celery stock chopped
  • 4 cloves garlic minced
  • 1/4 beet pealed and minced
  • 1 1/2 cups Oats
  • 3 tbsp flax seeds
  • 1 tsp thyme
  • 1 tbsp nutritional yeast
  • 1/2 tbsp corn starch
  • 1/2 cup aqua faba
  • 2 tbsp ketchup
  • 1 tbsp yeast extract
  • 1 tbsp bbq sauce
  • 1 tsp liquid smoke
  • pinch black pepper
  • 1 tsp smoked paprika

Ketchup Glaze

  • 1 tbsp Ketchup
  • 1 tbsp BBQ sauce
  • 1 tbsp brown sugar

Instructions
 

  • Preheat oven for 375º
  • Add your chopped mushrooms to a non stick pan covered in water and a pinch of salt. Bring to boil and allow water to simmer until pan is dry. Once near dry turn heat to low and add about a tsp of olive oil. Remove from heat and set aside
  • In a food processor add your chickpeas and pulse until slightly minced now add most of your carrots, onions, and beets. pulse until mixed together. The beat should turn the whole mix red
  • Remove from food processor and move to large bowl, add the rest of the onions, carrots, beets and your cooked mushrooms. Mix
  • Now the rest of your ingredients and mix well.
  • Coat an 11×5 bread pan with a bit of cooking oil and line with parchment paper
  • Press loaf mixture into bread pan
  • Bake for 30 minutes
  • Now mix together glaze ingredients, remove loaf after baking for 30 minutes, coat top of loaf with glaze then place back in over for an additional 30 minutes.
  • After 30 minutes remove from oven and let rest for at least 10-15 minutes!
