One Can of Chickpeas Could Change The Way You Think About Oatmeal

Chickpea Oatmeal

     Over the last couple of years, I have been on a mission to use a can of chickpeas to change everything. Today is no different, I’m going to use a can of chickpeas to make chickpea porridge or chickpea oatmeal. It turned out really good! There’s a few ways of making this recipe. Pinto Porridge 

     So to get started we need a can of pinto beans and a can of unsweetened coconut milk. Then I open up the pinto beans, drain and rinse them. Then toss them into a pan, cover it with cold water, just enough water to cover the beans. Give it a pinch of salt then bring it to a boil and then turn down the heat. Let them gently boil while stirring and simmering until the beans start to break down. You can keep adding water as needed. Then after about ten minutes we can add in the flavors. 

Cooking

     I chop up an apple and end up using about three quarters of it. Then add that to the beans along with a tablespoon or tablespoon and a half of maple syrup and a half teaspoon of cinnamon. Let that cook down in the water for about another ten minutes. Then I add in a quarter cup of coconut milk, let that cook down for another few minutes. And it’s done. It’s delicious! You wouldn’t know it is beans! This has around twenty grams of protein. Now for our chickpea bowl which is gonna have a little bit more protein! 

Tasting

     I drain and rinse my can of chickpeas then toss them into a pot and then we are going to add around a cup of soy milk and about four dates (chopped). Constantly stir this and let it cook down. Break down the chickpeas! In the end I added about a quarter cup of water to it. This one is plain but it is really good! It’s sweet, thick, rich and it has that porridge consistency. And it has thirty one grams of protein! I add some frozen mixed berries on top. It tastes just like oatmeal, you have to give this a try! Watch the full video here!

Ingredients
  

Pinto oats

  • 1 can pinto beans
  • 1 can unsweet coconut milk
  • pinch salt
  • 3/4 apple
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon

Chickpea oats

  • 1 can chickpeas
  • 1 cup soy milk
  • 4 dates
  • 1/4 cup water

Instructions
 

Pinto oats

  • Drain and rinse pinto beans. Add to pan, cover with cold water. Add a pinch of salt. Bring it to a boil and then turn down heat.
  • Let boil while stirring until the beans start to breakdown and soften.
  • After about 10 minutes, add in flavoring. I used cubed apple, maple syrup, and cinnamon. Let that cook down for 10 minutes.
  • Add in coconut milk and let that cook down for a few minutes.

Chickpea oats

  • Drain and rinse can of chickpeas.
  • Add them to pot along with soy milk and dates. Constantly stir and let this cook down.
  • Break down the chickpeas, add water if needed!
