Chickpea Rice Krispies Treats

     Today I’m going to be using chickpeas to make Rice Krispie Treats! This recipe is going to be easy and come together so well! You can decorate them or add fun ingredients to them! If you like this recipe, be sure to check out this one as well! and this one!

Chickpea Prep

     I get started by draining two cans of chickpeas then giving them a quick rinse and patting them dry. Once dry, put them on a baking sheet or wire rack and then throw them into your air fryer or oven on a low temperature for twenty minutes or so, to dehydrate. If they are not fully dehydrated after twenty minutes, give them another ten. You don’t want them brown but they do need to be crispy. 

Simmer

    I take my chickpeas out and I have about a cup and a half of them. The chickpeas will be fine on their own, you can make this recipe with just the chickpeas but I’m going to a blend of puffed rice. I add about half a cup of puffed rice to the chickpeas. I also add half a cup of natural peanut butter and half a cup of maple syrup. Give it a mix, add it to a saucepan and over to the stove. Bring it to a simmer, while stirring. 

Chill and Taste

     After a couple minutes, I pour the mixture into the chickpeas. Quickly stir it around, give it a pinch of salt, then into a baking dish! Really press it down with something flat! Let this chill in the fridge, covered, for at least thirty minutes. I waited until the next day to cut them up. I got about twelve of them. They taste great! So crispy, nutty, crunchy and delicious! They feel very similar to a rice krispie treat! They do need to stay cold though because they melt! You can make these however you like! Give it a try! Watch the full video here!

Ingredients
  

  • 2 cans chickpeas
  • 1/2 cup puffed rice
  • 1/2 cup natural peanut butter
  • 1/2 cup maple syrup
  • pinch salt

Instructions
 

  • Drain and rinse chickpeas, then pat them dry. Put on baking sheet or wire rack, into oven/air fryer at a low temp for 20-30 minutes or until dehydrated and crispy.
  • Take chickpeas out and add puffed rice, peanut butter, and maple syrup. Mix and add to saucepan, stir and bring to a simmer.
  • After a few minutes, pour mix into chickpeas. Quickly stir around, add salt then into baking dish. Press it down flat. Let chill in the fridge at least 30 minutes. Slice and enjoy!
