Chickpea Bread
I have turned chickpeas into everything! We are at the stage where we are going to be making a loaf of bread, utilizing one can of chickpeas. The bread is not made entirely of chickpeas so just follow along! This is going to be based on a recipe from “All Purpose Veggies.com”. Ingredient Prep
We are going to start by draining one can of chickpeas, saving the aquafaba (the liquid from the can). Toss the chickpeas into a bowl and then I’m going to microwave them for about sixty seconds. While those are microwaving I get my dry ingredients ready, I’m going to use a scale. I start with four cups of bread flour or 480 grams, three tablespoons sugar. The recipe I’m going off of calls for instant yeast and all I have is active yeast so I’m going to grab a tablespoon of the sugar and flour, right off the top. Now I add about one cup of warm water to the chickpeas and the tablespoon of sugar and flour.
Mixing and Kneading
Mix that up, then I add my active yeast. Set this aside for about five minutes. The last thing I add to the dry ingredients is a big pinch of salt. If you don’t have a stand mixer, I would blend the chickpeas first. My dry ingredients are all in my stand mixer, so I give them a quick mix together. Then I pour in the yeasty chickpeas, mix on a low speed for a few minutes. Once everything is combined I’ll flip it up and knead it for about ten minutes. When the dough ball is smooth looking I take it out and roll it into an even smoother ball. Now I olive oil up a bowl, add in the dough and stick it somewhere warm (my air fryer)!
Let It Rise
After that has risen for an hour/hour and a half it has doubled in size. I dump it out onto my work surface, and mold it into a circle then cut it into four. Now we need to square these up, I’m doing six by nine little rectangles. Then roll it up like a cinnamon roll. Once I have the four rolls I get my bread pan and add some olive oil, enough so that it doesn’t stick. Then add in the rolls! Now I’m going to stick this back into my air fryer or anywhere warm and let it rise for about an hour. I pull it out of the air fryer and preheat the oven for 350ºf. I’m going to make a base to brush the top and make it brown really nicely.
Taste Test
All it’s going to be is a tablespoon of the aquafaba or water whichever you want, and a tablespoon of maple syrup. I brush the top of the loaf with this and the oven is preheated so bake for fifteen minutes! After fifteen minutes, take it out, cover it, toss it back into the oven for 350º. And now this looks perfect! It’s high protein, high fiber, and a little bit lower carbs. I sliced my bread up, added some slices to the air fryer and made a sandwich out of it! It came out so good! One Can Of Chickpeas Will Change How You Think About Bread
Ingredients
- 1 can chickpeas
- 4 cups bread flour
- 3 tbsp sugar
- active yeast
- salt
- olive oil
- 1 tbsp aquafaba
- 1 tbsp maple syrup
Instructions
- Drain chickpeas (save aquafaba). Microwave the chickpeas for 1 minute.
- Add bread flour, and sugar to bowl, take a tbsp out and add it to the chickpeas along with warm water.
- Mix chickpeas and then add active yeast, set aside for 5 minutes. Add salt to dry ingredients.
- Mix dry ingredients then add in yeasty chickpeas, mix on a low speed for a few minutes. Once everything is combined flip it up and knead for 10 minutes.
- When it looks smooth, take it out and smooth it out more into a ball. Olive oil up a bowl and add the dough in. Put it somewhere warm.
- After over an hour it has doubled in size. I dump it onto my work surface and mold it into a circle then cut it in four. I turn the four pieces into 6×9 rectangles and roll them like cinnamon rolls.
- Once I have the four rolls I get my bread pan and add some olive oil so it doesn't stick. Then add the rolls. Put it back somewhere warm and let it rise for about an hour.
- Take it out and preheat the oven for 350ºf.
- I'm going to make a base to brush the top with. I mix aquafaba and maple syrup. Brush the top of the loaf with this and then put it in the oven for 15 minutes. After 15 minutes, take it out, cover it and put it back in at 350ºf. Enjoy!
