Chickpea Toast Crunch

     Growing up I loved cereal, and one of my favorites was cinnamon toast crunch! Can we make cinnamon toast crunch from chickpeas? First of course we need a can of chickpeas! A can of chickpeas is about one and a half cups of chickpeas. In a bowl I add one tablespoon plus one teaspoon of cinnamon, half a cup of granulated sugar, a little cornstarch and a pinch of salt. Making Dough

     Then I add my chickpeas into a food processor along with one and a quarter cups of bread flour, two tablespoons coconut oil, and a half teaspoon of cinnamon. Then I pulse it, I have my aquafaba over to the side so as I pulse it I add aquafaba in until it is a dough-like texture. Next I add a decent amount of flour to my work surface. Because I went a little too soft on my dough, I kneaded the dough into the flour. Then I cut the dough in half, set half aside. Roll out the half really thin, like the thickness of a quarter.

Baking 

     I brush away some of the excess flour off the dough. Now give the whole flat dough a light brushing with the aquafaba. Then take our cinnamon sugar mixture and spread out about half of it and press it in. Then it is time to cut our squares, about half inch squares. I have my oven preheated for 350ºf. Once the squares are all cut we toss them onto a baking sheet and bake for about ten to fifteen minutes. For the other half of the dough I roll it out, throw it onto parchment paper and then cut it to make it easier to transfer. 

Taste Test

     And instead of brushing it with the aquafaba and the cinnamon-ing, I throw the cinnamon mixture right on, and press it in without wetting it. I want to see if maybe I cooked it just a hair longer, I’d end up with a crispier cinnamon toast crunch. I ended up baking the dry ones for nineteen minutes. These taste awesome! They make a great snack. These taste like a healthy version of cinnamon toast crunch! And it seems like wetting them down and baking them makes them come out crispier! Ingredients
  

  • 1 can chickpeas
  • 1 tbsp + 1.5 tsp cinnamon
  • .5 cup granulated sugar
  • pinch cornstarch
  • pinch salt
  • 1 1/4 cups bread flour
  • 2 tbsp coconut oil

Instructions
 

  • In a bowl add cinnamon, granulated sugar, cornstarch and salt, mix!
  • Add chickpeas to food processor along with bread flour, coconut oil, and cinnamon. Pulse, and slowly add aquafaba until you get dough texture.
  • Add flour to your work surface and knead the dough. Roll it out really thin, like a quarter thickness.
  • Brush some excess flour off, then brush on some aquafaba. Now add on the cinnamon sugar mixture and press it in.
  • Cut into half inch squares. Bake at 350ºf for 15 minutes. Enjoy!
