Homemade Donuts
Today I’m going to be making donuts utilizing a can of chickpeas! We are going to make them egg free, diary free and they are also going to be yeasty and sweet! First thing we need to do is drain our chickpeas, saving the aquafaba! (the liquid inside the can). Then I add the chickpeas to a little blender or food processor and blend them. Chickpea Prep
Next I measure out one cup of the aquafaba, plus just a bit of water. I toss that into the microwave for a minute. Then add it right into the blender with the chickpeas and continue to blend. Once it becomes like chickpea milk I transfer it over to a large bowl. To it I add a quarter cup of sugar, three teaspoons of active yeast, give that a mix and set it aside for about ten minutes. After it has sat I add in three cups of bread flour. I add them one cup at a time and mix it in. Then I add one tablespoon of melted coconut oil.

Dough
Now it’s time to take it out of the bowl and knead it for about ten minutes. When the dough is nice and springy we need to let it rise. I add a tiny bit of that melted coconut oil to my bowl and spread it around before I add in my dough ball. Cover it and put it in a warm spot to rest for at least an hour. After the hour is over I take it out of the bowl and put it on a floured work surface. I cut it into four and rolled out a section. Next I punch out six donuts with a three or three and a half inch mold. I also use a smaller circle plunger to cut out the middle hole.

Frying Donuts
Once they are cut I put them in the oven just to stay warm. I rolled out another section of dough a little thicker than my last section. When all the donuts are formed I toss them and my donut holes into the oven and let them rise for about twenty minutes. While I wait for those to rise I make my blueberry glaze. I wash about half a cup of blueberries then toss them into a small saucepan with a little water. Let these cook down on a low heat for about fifteen minutes. I also heat up some coconut oil because that’s what I’ll be frying the donuts in. We need it to be about 350-360ºf.

Taste Test
I air fry my donut holes. And also start frying my regular donuts in coconut oil. Once the blueberries are breaking apart I add a dash of cashew milk to the pan. Stir that around and toss it into a food processor and blend it thin! Transfer that to a bowl then add two to two and a half cups of powdered sugar and mix. When the donuts are done frying I place them onto a wire rack to cool down. They need to be pretty cool before you dip them into the glaze. These turned out amazing! One Can Of ChickPeas Will Change How You Think About Donuts
Ingredients
- 1 can chickpeas
- 1/4 cup sugar
- 3 tsp active yeast
- 3 cups bread flour
- 1 tbsp coconut oil
- .5 cup blueberries
- cashew milk
- 2.5 cups powdered sugar
Instructions
- Drain can of chickpeas saving the aquafaba. Add chickpeas to blender and blend them. Microwave aquafaba and a little water and add it to blender, once smooth, transfer to a large bowl.
- In the bowl add sugar, active yeast and mix then set it aside for 10 minutes. Add bread flour one cup at a time and coconut oil.
- Remove it from the bowl and knead for 10 minutes.
- Add coconut oil to bowl then add in the dough, cover it and put it somewhere warm to rest for at least 1 hour.
- Take it out the bowl and put it on a floured surface, cut it into four and roll out the sections. I cut out my donuts with a 3/3.5 inch mold. Once they are cut I put them into the oven to stay warm and rise for about 20 minutes.
- For the glaze I add blueberries to a small saucepan with water, let them cook down on a low heat for 15 minutes.
- I heat some coconut oil to fry the donuts in, we need it 350-360ºf.
- Start frying the donuts in the coconut oil.
- Once the blueberries start to break apart add cashew milk to pan and stir. Then add it to a food processor and blend thin! Transfer to a bowl then add powdered sugar and mix.
- Let the donuts cool down on a wire rack then dip them in the glaze. Enjoy!
