Lentil Street Tacos
I love tacos. And I know a ton of people use lentils in their taco recipes, I just want to show a slightly different way of doing it! I’ve made a recipe similar to this in the past using chickpeas. Cilantro Cream Sauce
We are going to start by draining the lentils and we’re going to save the liquid which is called aquafaba. Then I give the lentils a rinse under gentle cold water. The first thing I’m going to make is an aquafaba cream using what we just got out of the can. I roll out a lime and squeeze it into the aquafaba and I also add about a teaspoon of sea salt. Now using my immersion blender I whip that up (you can use a regular blender). Then I take an avocado and add that in and whip it up again. I also chopped some cilantro up and added that in then mixed. I transfer this over to a squeeze container and then into the fridge.
Lentil Meat
For the lentil meat the first thing we need is two carrots. I quickly wash them and shred them. Once shredded, I add the carrots to a food processor along with the drained lentils, a tablespoon of chia seeds, a tablespoon of coconut oil, a tablespoon of soy sauce, and a tablespoon of tomato paste. Now I am going to pulse this for just a moment, I just want the ingredients to mix together. After it’s been mixed I add it to a parchment paper lined half baking sheet. Spread it out evenly. I’m going to put this in the oven and preheat it to 350ºf. I bake it for about twenty minutes.
Seasoning
I ended up leaving it in for thirty minutes and it looked great. Now I’m going to get a non-stick skillet on the stove with a little olive oil. I mince some onions up and toss them in with a bit of garlic. Let those cook for a moment then add in the lentil meat. I also add in some of the adobo sauce from a can of chipotle peppers, and one of the peppers, minced. Then add some salt, black pepper, Mexican oregano, and a pinch of water if it starts to dry out. I am just using some corn tortilla street tacos.
Taste Test
I add my tortilla on top of the meat while it is steaming to give them some flavor. Then I plate my tortillas, add on the meat, a squeeze of the cilantro cream, more cilantro and the squeeze of a lime! They taste delicious and refreshing! One Can Of Lentils Will Change How You Think About Street Tacos
Ingredients
- 1 can lentils
- 1 lime
- 1 tsp sea salt
- 1 avocado
- cilantro
- 2 carrots
- 1 tbsp chia seeds
- 1 tbsp coconut oil
- 1 tbsp soy sauce
- 1 tbsp tomato paste
- 1 tsp olive oil
- onions
- garlic
- 1 tsp adobo sauce
- 1 chipotle pepper
- salt
- black pepper
- Mexican oregano
- corn tortillas
Instructions
- Drain the lentils and save the liquid (the liquid is called aquafaba). Rinse them under cold water.
- Squeeze lime juice into the aquafaba and add sea salt, avocado, and cilantro then blend.
- I add this cilantro cream to a squeeze bottle then put it in the fridge.
- Wash and shred carrots then add them to a food processor along with the drained lentils, chia seeds, coconut oil, soy sauce, and tomato paste. Pulse this for a moment.
- Add to a parchment paper lined sheet and bake at 350ºf for 30 minutes.
- Put a non-stick skillet on the stove with some olive oil. Mince up some onions and add them in with the garlic. Let them cook for a moment then add in the lentil meat.
- I add in salt, black pepper, adobo sauce, chipotle pepper, Mexican oregano, and water if it gets dry.
- I add my tortillas on top of the meat while they are cooking to flavor them a little.
- At tortillas to plate, scoop on some meat, squeeze on some cilantro cream and enjoy!
