Homemade Gnocchi
This recipe is so incredibly easy and it tastes incredibly good! It barely takes any time at all! Little mess, no baking, no peeling! It’s homemade gnocchi. For the sauce we are going to keep it light but pretty fresh. Garlic, sage, a little bit of onion, tomato. I start by smashing and chopping a couple cloves of garlic. Sauce
Then I chop my onion too, we don’t need a lot. It came out to maybe two tablespoons of onion. I have a handful of fresh sage, I take the leaves off and chop those pretty fine. And I cube half of a tomato. I add this all into a cold pan with a big pinch of salt and about two or three tablespoons of olive oil. Then turn it on to a very very low heat, allow it to gently simmer together. In a separate pot, I fill it with some water, get it on the stove and to a boil! For the potato gnocchi all we need to do is drain the can of potatoes. Then I put my potatoes in a large bowl.
Gnocchi
I mash them with a fork, add a touch of olive oil (optional) and a little bit of salt, mix that in. Next we are going to add some flour, I start with one cup of all purpose flour. Then I get in there and knead it. It needs to be dry so if it is wet keep adding flour. Now I add some flour to my work surface, and keep kneading this together until you have a dry dough ball. I cut my dough into four pieces. Take three and put them in a bowl and cover them so they don’t dry out. We are going to roll it out into sharpie marker thickness. Then I cut them into little pieces of gnocchi. I set a fork down and roll the gnocchis down while pressing, to get the appropriate shape.
Taste Test
The water is boiling so I toss the gnocchis in. Then make the next batch! The sauce is looking really good! I’m only going to make two batches but that will be four servings. Next add the gnocchis to the sauce. You can save the leftover gnocchi and freeze it! After the gnocchi and sauce has cooked together a bit it just needs to be plated! You can see the perfect little gnocchi shapes! This is delicious! The potato makes a great pillowy noodle. The flavor of the sauce is so good. These taste like good homemade gnocchi! Ingredients
- a couple cloves of garlic
- 2 tbsp chopped onion
- handful sage
- .5 tomato
- salt
- 3 tbsp olive oil
- 1 can potatoes
- 1 cup all purpose flour
Instructions

- Drain can of potatoes then add them to large bowl and mash them with a fork. Add olive oil and salt, mix.
- Add all purpose flour, then knead. It needs to be dry, keep adding flour if it is not.
- Knead on work surface. Then cut it into four pieces and set three aside in bowl with lid. Roll dough into sharpie marker thickness. Cut into little pieces of gnocchi.
- Roll gnocchis on a fork to get the appropriate shape.
- Add gnocchis to boiling water, then into the sauce.
