Pumpkin Seed Eggs
The pumpkin seed, now this is not normally something I would think of when I’m thinking of eggs. After a little bit of inspiration from searching the internet and finding a company called Spero, they make a vegan egg, out of pumpkin seeds, pumpkin seed eggs! Well I came up with a recipe that I think will work and I believe my recipe is probably similar to theirs. So let us see if we can make a scrambled egg from a pumpkin seed. Blending Seeds
The first thing I did was cover the pumpkin seeds with water and let them sit overnight. Once they have sat overnight, I wash my seeds in a mesh strainer and agitate them, to remove as much skin as possible. You don’t have to remove all the skins but, the more skins you get off the better it will probably be! Time to add our seeds to a blender, along with 200 milliliters of water. Blend it up. This looked thicker than I wanted after blending, so I added 100 more milliliters of water. This still wasn’t enough water, it was way too thick, so I went up to 500 milliliters of water. It has a pale white/ green color right now, but adding turmeric will make the color more like eggs!
Cooking Seeds
At this point I’m going to add four grams of turmeric, then give it a quick blend. Now I add in the flavoring, three grams of garlic powder, and three and a half grams of black salt, pulse it a couple times to mix this all together. I toss this mixture into a mason jar and then into the freezer. Next, heat up a non-stick skillet, on about medium heat. Let it get really warm, and I’m adding half of a tablespoon of olive oil to the pan.
Tasting The Eggs!
I shake up my egg mixture a little bit, then add some of the egg in the pan. We are going to let this cook on one side for a minute. I’m not flipping it, more just scrambling it. It looks very light and fluffy. Wow! This is incredible. So delicious and easy to make! This is dead on an egg! And it is the easiest egg recipe I have ever made! Turning Pumpkin Seeds Into An Incredible Egg Replacement!
Ingredients
- pumpkin seeds
- 4 grams turmeric
- 3 grams garlic powder
- 3.5 grams black salt
- .5 tbsp olive oil
Instructions
- Cover pumpkin seeds with water and let them sit over night.
- Wash seeds in a mesh strainer and remove skins.
- Add seeds to blender with water, add turmeric, blend again.
- Add in garlic powder, black salt and pulse to mix it. Add mixture to mason jar and then into the freezer.
- Heat up a non-stick skillet on medium heat. Let it get really warm and add olive oil.
- Shake up egg mixture, then pour it onto the pan. Cook it like regular scrambled eggs. Enjoy!
