Healthy Soup
It’s soup season! Today, I am going to show you a healthy soup recipe that is incredibly versatile and also inexpensive! For this recipe you’ll only need a few things like celery, carrots, onion, vegetable broth and your beans. Beans are the versatile part, any bean you like would work really well in this recipe. In The Dutch Oven
First thing we need to do is chop up the whole onion. Then while I cut up the carrots and celery, I’m going to get the onions sweating off into my pan. I just use a large dutch oven and add about a tablespoon of olive oil, a pinch of salt and turn it on a medium heat. Add the chopped carrots and celery to the dutch oven now along with, the lentils, butter beans, lima beans, a pinch of salt, and some chopped garlic. Let it all cook down for about fifteen minutes.
Simmer
At this point I’m going to chop up my thyme and oregano and add it in along with six cups of vegetable broth. For the rest of the seasoning you could add some black pepper, white pepper, ginger powder. I’m just going to be adding black pepper. Give it all a good stir, and toss the lid on, let it simmer gently for about forty minutes.
Croutons
After it has simmered I give it a quick taste and decided to add a bit more salt. I originally was going to add kale, but I had a bag of spinach in the fridge so I added that in. Probably two or three handfuls of spinach. I’m going to quickly make some croutons for this. I have a leftover roll so I’m going to chop that up along with a few extra pieces of white bread I had. Toss that into a bowl with a little olive oil, some salt, and then whatever seasonings you like. Chives, onions, garlic, now into the air fryer.
Taste Test
It’s time to plate this up. I top on my croutons. I’m going to have food for days now! This soup is loaded with healthy carbs, and gut healing fibers. This tastes so warm and comforting. This is great for if you are sick, for the holidays, or just for any quick and easy meal! The croutons are great as well. There’s a very nice range of nutrients in this soup! Ingredients
- 1 onion
- couple carrots
- couple celery
- 1 tbsp olive oil
- lentils
- 1 can lima beans
- 1 can butter beans
- salt
- garlic
- thyme
- oregano
- 6 cup vegetable broth
- black pepper
- 2 or 3 handfuls spinach
Instructions
- Chop the onion, add it to dutch oven with olive oil and salt, turn it to a medium heat.
- Chop carrots and celery and add those in along with the lentils, beans, salt, and chopped garlic. Let it cook down for 15 minutes.
- Chop the thyme and oregano and add it in along with vegetable broth and seasonings. Give it a good stir, toss on the lid and let it simmer for 40 minutes.
- I add in spinach and then it's ready to eat!
