Sweet Potatoes Will Change how you feel about BREAD

Sweet Potato Buns

      Growing up, we ate potato bread all of the time. Potato bread, potato buns, we had them for hamburger buns, we had them for dinner rolls, it was just the common thing. And lately I’ve been on a kick of eating a sweet potato every day. So today I wanted to incorporate that into some bread. So let’s make some sweet potato buns! Potato Prep

     I start by peeling, chopping, and cubing one sweet potato. Then toss it into some cold water (enough to cover it) and add a little bit of salt. Bring this to a boil and let it boil for about fifteen minutes. When they are done I save the starchy water even though there isn’t a whole lot left. At this point I mash the sweet potatoes and then set it aside. I have about a tablespoon of starchy water and to it I’m going to add half a cup of water. Then I microwave it, we want it to be about 100ºf. Next add a whole packet of active dry yeast and around a half cup of bread flour. I give that a whisk and add a tiny shot of maple syrup. Let that sit for twenty minutes.

Dough

    After it has sat I dump it into a bowl and add about one cup of the sweet potato, mix. Then I add a teaspoon of baking powder, two teaspoons of salt, two tablespoons of sugar, and a quarter cup of coconut oil. Mix that in the best that you can. Then I slowly add about two and a half cups of flour. When it is no longer sticky I mix it by hand. I dump out the rest of the flour that was in the bowl onto my work surface and grab about an extra half cup of flour and knead the dough until it is all incorporated. 

Baking

     I warmed up my toaster oven for a minute. Then I add a little oil to the bottom of the bowl, make sure it is coated. Add in the dough, coat the top of the lid with oil too. Toss this into the toaster oven for about an hour and a half to two hours. While it rises I make a little topping. In a bowl I add about four tablespoons of cashew butter, one tablespoon of maple syrup, two teaspoons of cinnamon, a little salt and mix it together! Throw it into a little container, it’ll firm up in the fridge. 

Taste Test

     I take out my dough, flour my work surface, and slice the dough in half. I roll my halves into logs and cut seven rolls from each half. Then place the rolls onto a parchment paper lined baking sheet. And throw them in the oven, let them rise for about fifteen minutes. Once they rise I pull them out, preheat the oven to 400ºf, drop them in and they only need to bake for about fifteen minutes. They smell and taste delicious. With or without the spread, these are so good! It’s perfectly sweet bread! Like a cloud in your mouth. These would be great for a sandwich! Watch the full video here!

Ingredients
  

  • 1 sweet potato
  • salt
  • 1 packet active dry yeast
  • .5 cup bread flour
  • shot maple syrup
  • 1 tsp baking powder
  • 2 tbsp sugar
  • 1/4 cup coconut oil
  • 2.5 cup flour
  • oil

Topping

  • 4 tbsp cashew butter
  • 1 tbsp maple syrup
  • 2 tsp cinnamon
  • salt

Instructions
 

  • Peel, chop and cube sweet potato. Add it to cold water with salt.
  • Bring it to a boil for 15 minutes. When they are done, save the starchy water.
  • Mash the potato and set it aside.
  • Add more water to starchy water then microwave it to 100ºf. Then add active dry yeast packet, and bread flour. Mix then add maple syrup and mix again. Let sit for 20 minutes.
  • Add to bowl along with sweet potato and baking powder, salt, sugar, and coconut oil. Mix! Slowly add in flour.
  • Mix by hand then put dough on counter and knead.
  • Warm up toaster, add oil to bowl, add in dough and cover it. Then put it in the toaster oven for about an hour and a half to 2 hours.
  • For a topping I use cashew butter, maple syrup, cinnamon and salt. Mix!
  • Take out the dough, slice it in half then roll the halves into logs. Cut each log into 7. Place the rolls onto a parchment paper lined baking sheet. Let them rise for 15 minutes.
  • Once they rise pull them out and preheat oven for 400ºf. Put them in and bake them for 15 minutes.
