The Breakfast I’ll be Eating ALL YEAR for my Health

Berry Porridge

     There are a few amazing breakfast recipes I have been loving recently, like porridge! It’s really good, you can meal prep it, and it only takes about twenty minutes to make four days worth!! But it’s not regular porridge like what you might think. This is a quinoa porridge, which I feel is overlooked quite a bit! It comes out to like thirty cents a serving! It’s super comforting, but it’s also loaded with all the nutrients you’d get in quinoa! If you like this recipe be sure to check out this one too! and this one!

Berry Topping

     But first, I’m going to prep one of my favorite toppings for my overnight oats and my quinoa porridge. This is easy berry porridge and it’s loaded with vitamin C! First I’m going to add half a cup of water into a pan and kick the heat up, along with a cup of frozen strawberries and a cup of frozen berries, I’m using blueberries. I also add two pinches of salt, two pitted dates, and a couple tablespoons of lemon juice. Bring that to a simmer, let the frozen berries thaw out and get really soft. Once it is all soft I toss an immersion blender in and blend it all the way out. You could just use a fork to mash the rest. 

Simmer

     Time to take it off the heat and we are going to add three tablespoons of chia seeds. Mix that up, toss it into a bell jar and into the fridge, let it sit for around ten minutes! Now for the quinoa porridge. I add one cup of quinoa to a strainer and give it a gentle rinse. Then add the quinoa into a saucepan, with a can of plain unsweetened coconut milk, I fill the can back up with water, add that in as well as an additional quarter cup of water. Now I add just a little maple syrup (or whatever your favorite sweetener is), then one teaspoon of cinnamon and a pinch of salt. Bring this to a boil then reduce the heat to a simmer and let it sit for about fifteen minutes. 

Taste Test

     You want to keep adding water to keep the consistency just right. I keep simmering and stirring until it is at the consistency that I want. Once it’s right I have a few bell jars to put the porridge in. You can eat it cold or hot, you can heat it up right in the bell jar. At this point I toss it in a bowl, top it with my berry chia seed jam that I made, maybe a little granola, extra chia seeds, salt, cinnamon, whatever you like! It tastes so incredibly good! The cinnamon tastes shines through. This recipe makes four servings! It feels nice and light. The quinoa has a nice nutty flavor to it. You should give this awesome, healthy, berry porridge a try! Ingredients
  

Topping

  • .5 cup water
  • 1 cup frozen strawberries
  • 1 cup frozen blueberries
  • salt
  • 2 dates
  • couple tbsp lemon juice
  • 3 tbsp chia seeds

Porridge

  • 1 cup quinoa
  • 1 can plain unsweet coconut milk
  • water
  • maple syrup
  • 1 tsp cinnamon
  • salt

Instructions
 

Topping

  • Add water to pan and turn up heat, then add frozen strawberries, frozen blueberries, salt, pitted dates, and lemon juice. Bring this to a simmer.
  • Immersion blender it out, or mash it with a fork.
  • Once smooth, take off the heat and add chia seeds. Mix it up then add to a jar and into the fridge for about 10 minutes.

Porridge

  • Add quinoa to strainer and gently rinse it. Add quinoa to saucepan, with coconut milk, fill coconut milk can with water and add that, as well as a quarter cup more water.
  • Add maple syrup (or whatever sweetener you want), cinnamon and salt. Bring it to a boil.
  • Reduce the heat to a simmer and let it sit for 15 minutes.
  • Continue to add water, stir and simmer it until the consistency is the way you want.
  • Once the consistency is right, take it out, add it to jars, serve it with the berry topping and enjoy!
