Sweet Potato Pasta
Sweet potato pasta is amazing and easy to make! You’d think it was just normal pasta. I wash my sweet potato, wrap it in a wet paper towel, and toss it into the microwave. I’m doing two potatoes so about eight minutes. Once out of the microwave I peel away the skin, mash the potato then store it in the fridge for about twelve hours. Kneading
I transfer the sweet potato to a large bowl, and add half a cup of all purpose flour. I knead it with my hands. It was still soft so I put it on the counter and kneaded in more flour. Once the dough ball is tacky but not sticking to your hands, put it back in the bowl and cover it up for a few minutes while we boil water. I roll out a quarter of my dough ball then fold it over itself and slice it into pasta.

Taste Test
Put the noodles in the boiling water for only about two minutes. In a really hot pan I add dairy free butter, some garlic, and chopped sage. As soon as the pasta is done I toss them right into the butter and sage mix. Then plate! It is delicious! You wouldn’t know it was a sweet potato! Watch the full video here!

Ingredients
- 2 sweet potatoes
- all purpose flour
- dairy free butter
- garlic
- sage
Instructions
- Wash sweet potatoes, wrap in wet paper towel and microwave for 8 minutes. Peel away the skin, mash the potato then store it in fridge for 12 hours.
- Transfer potatoes to large bowl, add all purpose flour and knead. Once the dough is tacky but not sticking to hands, put it back in bowl and cover it.
- Start boiling water. In hot pan, add butter, garlic, and sage.
- Roll out a quarter of the dough, fold it, and slice into pasta.
- Boil pasta for 2 mins, add to butter and sage, mix. Enjoy!
