I ended up going through the video, slowly and came up with this.
To make the fat:
½ c cacao butter melted, set aside
In blender:
¾ c water
1 tsp methyl cellulose
Add 1 c refined coconut oil with the ½ c cacao butter, then drizzle into the water/cellulose in the blender til thick/foamy. Separate into 4 containers for future use. Freeze—each is good for 1 lb of meat.
For the meat:
In a large metal bowl…
1 c textured veg protein
3 tb pea protein
3 tb nutritional yeast
2 tb mushroom seasoning
1.5 tb methyl cellulose
1.5 tsp corn starch
2 tsp beet root powder (maybe less—for color)
½ tsp soy lecithin
Mix well.
Add in…
1 tsp apple cider vinegar
½ tsp pomegranate molasses
Few drops lemon juice
½ tsp molasses
1 c cold water while mixing everything together
Rest at least 30 mins in fridge til good and cold. Going to add coco butter, and don’t want it to melt.
Chop up the frozen coco butter into chunky bits, but don’t touch cuz it will melt.
Mix in with the meat. Form patties.
Season both sides, then fry in pan.
No. Just no. Deeply dissapointed. My $82 hamburgers tasted and felt like wall paper paste. Just horrible. $82 down the drain; I’m so upset. You had given a bad review of the Rachel Burger (https://www.youtube.com/watch?v=qyaQ-wfojbM) which I thought was delicious. So when you said you had something better, I thought “great, what could be better than the Rachel Burger?”, so I dove in. Bought all the expensive ingredients, which frankly was like a chemistry project rather than cooking (Rachel used real food). I had high expectations because your video made the “meat” look really good, and you and your girlfriend gushing over it…I bought into it. I was so excited about this, couldn’t wait to share the [hopefully] great results with all my friends. But it was disgustingly gross. And I’m a long time cook, with tons of experience, I didn’t make any mistakes when I followed the directions explicitly. I recommend people don’t waste their money.
