This recipe is going to be for lentil soup! That you can make once, and have different meals from it every night out of the week! So let me show you how to make the base soup. Which will make about ten servings. First we need around one pound of dry lentils. I’ll also be using two carrots, three quarters of an onion, and about five cloves of garlic. I start by chopping the carrots and onion and tossing them into a pot with the oil, let it sweat out for a few minutes. I sprinkle in a little celery seed. Then I’ll start mincing the garlic. And wash the lentils, then toss them in. I also add in about two cups of vegetable broth and six cups of water. Let that simmer for about thirty minutes with the lid on.

Lentil Tacos
The next day I add some of our cooled lentils to a hot pan with a bit of olive oil. Then I add some seasoning, chili powder, paprika, garlic powder, onion powder, and dried oregano. Mix it up and simmer it down. This is going to make an awesome taco filling. I add it to my tortillas with some salsa, avocado cream, and cilantro. These make amazing tacos!
